The Tapioca (Cassava Root) Sandwich is an “Unique and Nutritious Delight” innovative and healthy twist on traditional sandwiches.
Cassava root, also known as tapioca, is a versatile tuber widely used in many global cuisines for its rich nutritional profile and satisfying texture.
In our kitchen garden in Kanyakumari, the tapioca plant holds a special place. The lush green leaves and sturdy roots of the tapioca plant remind me of the countless meals and joyful moments shared with family and friends. Nowadays, as we look at the tapioca, it brings back fond memories of the past and a sense of connection to our Kanyakumari home.
This sandwich has nutty flavour of cassava, complemented by a medley of vegetables, herbs, and spices, making it a wholesome and delicious meal option. Ideal for breakfast, lunch, or a light dinner.
The Tapioca Sandwich offers a delightful fusion of textures and flavours, providing a creamy richness from the fresh cream (malai). This sandwich is not just a treat for the taste buds but also a nutritious and filling meal.
Ingredients:
- Sandwich bread: 8 pieces
- Malai/fresh cream: half cup
- Note:instead of malai/ fresh cream butter can be used.
For stuffing:
- Tapioca (cassava root):300gm
- Onion: 1 no. (Medium size)
- Green chili: 2-3 no.
- Coriander leaves: 2o gm
- Mustard oil: 1 teaspoon(optional)
- Salt: 1 teaspoon
Preparation:
- Peel off and chop tapioca.
- Boil tapioca with half teaspoon of salt. Keep aside.
- Peel off onion and chop the onion into small pieces. Keep aside.
- Finely chop the coriander leaf and green chili. Keep aside.
- Take four slices of bread, discard edges of the bread. Keep aside.
Method:
For preparing stuffing:
- Take a mixing bowl put boiled tapioca, salt, mustard oil and chopped onion, green chili, coriander leaves into this bowl.
- Mash all with the help of masher or hand.
- Mash properly (more you mash better will be test), stuffing is ready.
Making sandwiches:
- Take 2 slices of prepared bread, spread Malai/fresh cream on one side of both breads.
- Put stuffing on the malai/fresh cream side and spread properly.
- Cover the stuffing with another bread slice.
- Now toast the sandwiches in a toaster/grill.
- Toast till it become brown in color.
- Transfer and serve with Green Chutney, salad and tomato ketch up.
- Serve hot.
