Spring onion with aaloo (potato) ki sabji

This “Spring onion and Aaloo ki sabji” is extremely delightful, the leftover of this recipe I usually served as snacks with our afternoon tea. The true taste of spring onion takes me to another world. Above all it is available throughout the year; the positive point is nutritional value, as spring onion is good source of vitamins and minerals; it has antibacterial and anti-fungal properties, it protects against ovarian cancer. It also helps to kill worms and other parasites in the stomach.

Ingredients:

  • Spring onion: 200 gm
  • Potato: 2 no. (Medium size)
  • Ginger: 1 teaspoon (paste)
  • Green chilli: 2 no.
  • Cumin seed: half teaspoon
  • Salt: 1 teaspoon
  • Turmeric powder: half teaspoon
  • Coriander powder: 1 teaspoon
  •  Chilli powder: one and half teaspoon
  • Mustard oil/cooking oil: 3 tablespoon
  • Garam masala powder: half teaspoon
  • Bay leaf: 1 no.
  • Cinnamon: 1”stick

Preparation:

  1. Wash and clean spring onion properly in running water for couple of times; chop into very fine pieces. Keep aside.
  2. Chop green chilli. Keep aside.
  3. Boil potato, peel and chop in small pieces, keep aside.

Method:

  1. Take fry pan, put oil, when it smokes add cumin seeds, sputter it for few seconds.
  2. Add Chopped green chilli and ginger paste; stir fry for few seconds (keep it stirring otherwise it may burn), add chopped spring onion and fry on medium flame (about 4-5 minutes).
  3. Add chilli powder, coriander powder, turmeric powder and salt; continue to fry on lower flame with lid on (cover it for few minutes till onion becomes tender).
  4. Add potato and cook for 2-3 minutes, cover and lower the flame; “Spring onion and aaloo ki sabj” is ready to be served.
