“Singhara (water Chestnuts) Stir fry /Dry” is low in calorie and has very negligible amount of fat which makes it the super food, good to consume when you feel hungry. A crispy delicious and flavourful, teatime snacks or even as light dinner with bowl of “Creamy Tomato Soup” makes it complete and satisfying. Above all stir fry retain more nutrients than boiled one.
It is important to saute on medium to high flame (cooking on low flame, it might loose its crunch).
Adding peanut in the recipe adds extra crunch and nutrients too.
I am not fascinated about onion and garlic. The dish is onion garlic free and can be served as fasting day as well. If you are onion garlic lover; feel free to add, the taste is still awesome.
Singhara (water Chestnuts) is beneficial for Thyroid as well as increases the sperm count too.

Ingredients
- Fresh Water Chestnut or Singhara: 250 gm
- Pink Rock salt/Salt: 1 teaspoon (As per taste)
- Roasted Peanut: 2 tablespoon
- Cumin: 1/2 teaspoon
- Green chilli: 2 no.
- Lemon: 1 no.
- Black pepper powder: 1 teaspoon
- Ghee (clarified butter)/ Olive oil: 1 tablespoon.
Preparation:
- Chop green chilli, keep aside.
- Peel out the Kachche Singhara (Fresh Water Chestnuts), chop them into two halves, keep aside.
Method:
- Heat ghee in a frypan, add cumin, sputter for few seconds; add green chilli and peanuts, saute on lower flame for 2-3 minutes, take out. Keep aside.
- Add chopped Singhara in the same frypan; fry on medium to high flame for couple of minutes or until it gets light golden in colour, keep stirring continuously, add salt, give a good mix. Add fried peanuts and green chilli. Put off the flame, add lemon juice to enhance the taste.
