You can take this as a morning snacks; actually this is complete morning breakfast. This salad has power of vegetables, sprouts and fruits; packed with nutrients and vitamins!
Ingredients:
- Sprout mung beans (green gram): 1 cup
- Corn: half cup
- Fresh coconut: 1/6
- Pomegranate: one forth cup
- Capsicum: 1 no.
- Roasted cumin seed powder: 1 teaspoon
- Salt: half teaspoon (as per your taste)
- Chat masala: half teaspoon
- Green coriander: 1 tablespoon
- Paneer/cottage cheese: 50 gm.
- Refined oil/olive oil: 1 teaspoon
- Mustard seed: one forth teaspoon.
- Asafoetida: 1 pinch
Preparation:
- Scrap coconut, keep aside.
- Chop capsicum into small square shape.
- Steam sprouted mung beans, corn, and capsicum, either in pressure cooker or microwave, keep aside.
Method:
- Heat oil in a fry-pan; add mustard seed, asafoetida, sputter for few seconds, add steamed sprouted mung beans, corn, and capsicum.
- Add salt, roasted cumin seed powder and chat masala, paneer and scrap coconut; continue to fry for couple of minutes. Put off the flame.
- Place the salad in the plate /salad bowl.
- Garnish with chopped coriander leaves and pomegranate.
