Moong Dal Pakoras, are a popular snack in many parts of India, particularly enjoyed for their crisp texture and nutritious profile.
But in today’s recipe I have given some twist, I used mung sprout for the recipe. In India, the practice of sprouting beans, which enhances their nutritional profile by increasing vitamin and mineral content, has been practice for generations.
“Mung/Moong (Green Gram) Sprouts Pakoda/Fritters” delightful and crunchy snack, is deeply embedded in the culinary traditions of India. Mung sprouts, derived from germinated mung beans, are highly valued in Indian cuisine especially for their nutritional benefits.
Legumes and pulses have been an integral part of the diet in India,
a way to incorporate these nutritious sprouts into everyday meals, especially during monsoon and winter seasons when hot, spicy snacks are particularly enjoyed.
To make these fritters, sprouted mung beans are ground into a coarse paste, to which finely chopped onions, green chilies, and fresh herbs like coriander are added for flavour.
Spices such as cumin, turmeric, ajwain and salt are mixed into the batter to enhance the taste. The mixture is then shaped into small balls or patties then deep-fried until they turn golden and crispy. These fritters are often served hot with chutneys or ketchup, making them a perfect monsoon or winter snack due to their warm, comforting nature.
Besides being delicious, mung sprout fritters are also packed with protein, making them a healthy choice for snacking.
Ingredients:
- Mung/Moong Sprout: 2 cups
- Rice Flour: 2-3 tablespoon
- Salt: 1teaspoon (as per your taste)
- Turmeric Powder: 1/2 teaspoon
- Ajwain: 1 teaspoon
- Onion: 1 no. (Small)
- Ginger: 2” pieces
- Garlic: 1/2 pod
- Green chilli: 1-2 no.
- Fresh coriander leaves (chopped): 1 tablespoon
- Oil: for frying
Preparation:
- Roughly grind mung sprout along with green chilli and garlic with help of small amount of water, keep aside.
- Finely chop ginger and onion, keep aside.
Method
for making pakoda (fritters):
- Take a big mixing bowl, put sprouted mung paste, rice flour, roughly chopped onion, ginger, salt, ajwain, and turmeric powder, mix well.
- Now batter is ready.
- Take flat and heavy bottom fry pan, put oil in the fry pan, and Let oil to smoke.
- Drop small size batter in it. (Either helps of your hand or spoon)
- If batter comes up, it means right temperature of oil otherwise wait for a while and test again.
- After getting right temperature of oil, deep fry all pakoda (size of your choice), till golden brown. Keep aside.
- Repeat this till all batter is finished.
- “Mung/Moong (Green Gram) Sprouts Pakoda/Fritters” good for evening snacks. Serve piping hot with green chutney and sesame seed chutney.
