“Khajuria/Thekua” is one of the traditional and popular dishes from Bihar.
We whole family love this sweets, on the festive occasion of Hartalika Teez and Putra Jitiya, this is mandatory item cooked at every home.
Day after tomorrow is Hartalika teez, would like to wish all my viewers “Happy Hartalika teez.”
Ingredients:
- Maida/Aatta: 500 gm
- Sugar: 300 gm.
- Milk: half cup
- Ghee (clarified butter): for deep frying
- Ghee (clarified butter): 100 gm (for moin that is put it into dough itself).
- Clove powder: 1 teaspoon
- Saunf (Fennel seed): 1 tablespoon
- Green cardamom powder: half teaspoon
- Dry coconut: 3-4” piece
Preparation:
- Dissolve sugar in milk; make sugar syrup Keep aside (all the sugar may not get dissolved, some of the sugar may remain in slurry form in the bottom, let it be like this).
- Slice dry coconut, keep aside.
For making dough:
- Take a wide vessel; pour Aatta, ghee (as moin), Mix well by rubbing between palms.
- Add Clove powder, Saunf, Green cardamom and Dry coconut.
- Add sugar syrup in small quantity and knead them, if required, put some more sugar syrup.
- Make very hard dough, don’t allow it to become soft, hence add syrup in small quantity. (The dough can be made in food processor also)
- Cover and Keep aside, to be used after 10-20 minutes.
Method:
- Take a handful of dough and shape as shown in photo (like tikka) by pressing in your fist.
- Put the tikka on the molds (grater), press the tikka with palm as shown in photo. Keep aside.
- Raw khajuria is ready. Repeat this till all dough is finished.
- Take a heavy bottom fry pan, put ghee and heat it on medium flame; when smoke just starts to come from ghee (clarified butter) put 6-8 no of raw khajuria.
- Deep fry the khajuria on medium low heat till golden brown colour appear; slowly turn over all the khajuria, Fry till it becomes golden brown in colour.
- Take out on the kitchen napkin; Repeat this till all is finished.
- Now, traditional and popular sweets are ready to be served with tea.
- It can be stored for 2-3 weeks, keep it into airtight container.
