“Guwar Phalli (Cluster Beans) Masala” is a flavourful and nutritious Indian dish. This masala dish is a popular choice in many Indian households, particularly in regions where cluster beans are widely cultivated as Rajasthan, Gujarat, Haryana and Utter Pradesh.
In my version of Guwar Phalli Masala, I added a unique twist by incorporating peanut and sesame seed powder, which brought a rich and nutty flavour to the dish. The addition of these ingredients not only enhances the taste but also adds a delightful texture, making the masala more hearty and satisfying.
The peanut and sesame seed powder blend with the spices, creating a flavourful coating for the guwar phalli. This variation adds depth to the traditional recipe, making it a more indulgent and nutritious dish that pairs beautifully with Roti, Paratha, or Rice.
Ingredients:
- Gwarphalli: 200gm
- Onion: 1 no. (Medium size)
- Garlic: 3 flacks
- Ginger: 1” piece.
- Tomato: 1 no. (Medium size)
- peanut : 2 tablespoon
- Sesame seed: 1 tablespoon
- Green chilli: 1-2 no.
- Turmeric powder: half teaspoon
- Chilli powder: one forth teaspoon
- Coriander powder: 1 teaspoon
- Salt: half teaspoon
- Mustard oil/Cooking oil: 2 tablespoon
- Cumin seed: half teaspoon
Preparation:
- Cut Gwarphalli (cluster beans) into 1 inch pieces.
- Chop onion into fine pieces.
- Chop tomato into small pieces.
- Cut green chilli, ginger and garlic in small pieces.
- Dry roast ground nuts and sesame seed.
- Peel off the skin of ground nut.
- Coarsely grind the ground nut and sesame seed.
- Blanch the gwarphalli (put the vegetables into the boiling water for 2 minutes and immediately put into chilled water and then in running water )
Method:
- Heat oil in a frypan, when smokes come out, add chopped onion, stir fry on high flame for couple of minutes.
- Add green chilli, garlic and ginger, continue to fry; add tomato, coriander powder, chilli powder, salt and turmeric powder.
- Continue to cook on medium flame for couple of minutes or until oil separates from masala.
- Add blanched gwarphalli, continue to cook with lid on (About 4-5 minutes)
- Occasionally stir it .Cook till vegetable become soft.
- Add coarsely grind ground nut and sesame seed.
- Mix well. Guwarphalli masala(cluster beans) is ready.
- Serve this with Roti or Rice as a side dish.
