Yesterday, we visited the local bhaji market (vegetable market) and were delighted to find an abundance of very fresh green chillies (mild spicy used to prepare mirchi bhaji). The vibrant green colour and crispy texture immediately caught our attention, and it reminded us of the flavours of Rajasthan.
Nostalgia took over as we recalled the flavourful “Green Chilli Ki Sabji” we often enjoyed there.
Without a second of thought, we decided to bring these fresh chilies home and prepare the recipe. The aroma of the masalas cooking with the chilies instantly transported us back to the rustic kitchens of Rajasthan, where this dish is celebrated for its bold and tangy flavours. It was a wonderful way to relive those cherished memories through food.
“Green Chilli Ki Sabji” is a flavourful and spicy Indian dish that highlights the boldness of green chilies as the star ingredient.
This recipe is a treat for spice lovers, offering a fiery kick balanced with aromatic spices and a hint of tanginess.
Typically served as a side dish, it pairs perfectly with soft Chapati, Puri, or Paratha, a semi-gravy consistency.
Ingredients:
- Green chilli (mild spicy) : 250 gm
- Onion: 2 no (Medium)
- Tomato: 2 no.(Medium)
- Ground nut (Peanut): 100gm.
- Cumin: 1 teaspoon
- Coriander powder: 2 tablespoon
- Chilli powder: 1 teaspoon
- Salt: 1 teaspoon, as per your taste
- Turmeric powder: half teaspoon
- Curd: 1 cup (Fresh)
- Mustard oil/cooking oil: 1 serving spoon
Preparation:
- Wash the Green Chilli, carefully make slit length wise so that it remains joined with stalk.
- Roast ground nut lightly on low flame and keep aside; let it cool and remove the upper layer or skin, make course powder, keep aside.
- Prepare wet masala by adding coriander powder, turmeric, chilli powder and salt in curd; mix all ingredients well. Now wet masala is ready.
- Finally chop onion and tomato, keep aside.
Method:
- Heat oil in a wok/fry pan; stir fry green chilli on high flame for couple of minutes take out, keep aside.
- Add cumin in remains oil, allow to sputter for few seconds.
- Add chopped onion, stir fry for couple of minutes, add tomato, fry for 2-3 minutes on low flame (stir continuously) until it gets messy in appearance.
- Add wet masala, continue to fry for 3-4 minutes or fry until oil separate from the masala.
- Add 1 cup of hot water (as per gravy requirement); continue to cook for couple of minutes add fried green chilli.
- Let it boil for 2-3 minutes; add coarsely ground peanut powder, put off the flame.
- Enjoy “Green Chilli (Hari Mirch) ki Sabji” is ready to be served as side dish.
