Gond(edible gum) ke laddu (sweet dish)

     As winter approaches we start to switch to food, which has properties to keep body warm as “Dry Fruits Laddu”, “Til ke Laddu” and so on…

    My family like to eat “Goand ke Laddu” in winter. This authentic classic laddu often used as winter sweets all over India but more popular in Rajasthan and Utter Pradesh.

    While in Rawat Bhata, Rajasthan; I frequently  prepared it. This is made with gond (edible gum), whole wheat flour, ghee and dry fruits.

    Gond is known to boost stamina and health, helping one keep away from falling sick due to cold and cough. It also known to treat low Vitamin D levels in the body. It  helps lubricate the joints, it is extremely effective to reduce back pain as well as other joint pains.

    It can be stored in airtight  container for 3-4 weeks at room temperature. 

Ingredients –

Preparation:

  1. Crush Gond into small pieces and keep aside.
  2. Grind the sugar and keep aside.

Procedure;

  1. In a heavy bottom pan, heat the ghee; deep fry Gond. Keep aside; when it becomes cool, powder it with the help of palm or base of a bowl.
  2. Add Aatta into the left out ghee and stir it continuously on medium flame, till light golden colour appears (about 10-12 minutes), put off the flame.
  3. Take another small fry pan, add 1 teaspoon ghee; stir fry cashew nut, mix with fried Aatta.
  4.  Add green cardamom powder and ground sugar and deep fried powdered Gond; mix all together .
  5. Take one handful mix; shape the mixture in laddu by using your hand.
  6. Depending upon size of laddu 15 to 20 laddu will be ready.
  7. Decorate with Chandi ka varak, delicious “Gond(edible gum) ke laddu (sweet dish)” is ready to serve.
