During this lock down each one of us craving for food which are something different; our taste buds demand something new, I would like to share the paneer recipe with variation in gravy with domination of fresh coriander greens. It produce exceptional and outstanding aroma which is really soul satisfying.
Ingredients
- Green coriander: 100 gm
- Onion: 1 no (medium)
- Tomato: 1 no (medium)
- Garlic: 5 cloves
- Ginger: 2 inch piece
- Paneer/soya paneer/cottage cheese: 200 gm
- Oil: 4 table spoon
- Salt: one teaspoon
- Cumin seed(jeera): 1 teaspoon
- Garam masala powder: half teaspoon
- Chilli powder: half teaspoon
- Turmeric powder: half teaspoon
- Coriander powder: 1 teaspoon
- Green chilli: 4-5 no.
- Cashew nut:10-12
- Cinnamon:1” stick
- Clove: 3-4 no.
- Green cardamom: 1 no.
Preparation
- Grind the onion, ginger, garlic and cashew nut together. Keep aside.
- Grind coriander leaf with green chilli and keep aside.
- Grind tomato and keep aside.
- Cut the paneer in 1″ cube.
Method:
- Take fry pan, put oil; when oil starts to smoke, add cumin seed, cinnamon, clove and green cardamom, sputter it for few seconds, add ground onion, garlic, cashew nut and ginger paste.
- Stir fry about 3-5 minutes on medium flame; add tomato paste red chilli powder, coriander powder and turmeric powder, continue to fry for couple of minutes or till tomato paste dried up.
- Add half of the coriander and chilli paste stir fry for couple of minutes; add 1 cup of hot water, let it boil, add paneer and continue to cook for a minute, add rest of the coriander paste, immediately put off the flame.
- Stir it properly, so that green colour is not getting pale.
- Transfer into serving bowl; Green- green coriander paneer is ready to be served.
