When my daughter-in-law asked me for a one-pot meal using millet, I immediately thought of “Bajra Millet/Any Millet Khichdi”. This recipe is not only simple to prepare but also incredibly nutritious, making it a perfect choice for a wholesome meal.
To elevate the Bajra Millet Khichdi and make it even more special, I decided to add a handful of cashew nuts and some exotic vegetables. The exotic vegetables, with their vibrant colours and distinct flavours, not only enhanced the dish’s visual appearance but also introduced a variation in taste and texture, making the khichdi even more nourishing and flavourful.
I shared with her how bajra, or pearl millet, can be combined with lentils and spices to create a dish that is both satisfying and full of flavour.
The one-pot nature of this khichdi makes it convenient for busy days.
This twist on the traditional recipe turned the simple one-pot meal into a exquisite meal, a delicious and nutritious option that the whole family can enjoy.
Ingredients:
- Bajara Millet/Any Millet: 1/2 cup
- Rice: 1tablespoon
- Mung Dal (split Green Gram): ½ cup
- Mung Sprout: 2 tablespoon (optional)
- Cinnamon: 1” stick
- Cashew Nut: 8-10 no.(optional)
- Clove: 2 no.
- Black pepper: 3-4 no.
- Bay leaf: 1 no.
- Cumin: 1/2 teaspoon
- Red chilli: 1 no.
- Ghee: 3-4 tablespoon
- Salt: 1/2 teaspoon
- Turmeric powder: 1/2 teaspoon (optional)
- Coriander powder: ½ teaspoon
- Fennel seed powder: 1 teaspoon.
- Red chilli powder: ½ teaspoon(optional)
- Potato: 1 no.
- Red Bell Pepper: 1/2 no.
- Yellow Bell Pepper: 1/2 no.
- Vegetables as you like: 1/2 cup
- peas: 2 tablespoon (Fresh/Frozen)
- Onion: 1 no. small
- Tomato:1no. small
- Ginger: 1” piece
- Garlic: 3-4 flacks
- Garam masala powder: 2 pinch (optional)
- Lemon juice: 1 teaspoon(as per your taste).
- Chopped green coriander leaves: 2 table spoon
Preparation:
- Clean and wash millet, rice and dal, keep aside (if you have time, better to soak for an hour or two it helps to cook faster)
- Chop onion, tomato, garlic and ginger into small pieces, keep aside.
- Peel off and chop potato into small pieces. Keep aside.
Method:
- Heat ghee in a cooker body, add cumin, bay leaf, red chilli and whole Garam masala; sputter for few seconds, add potatoes, stir fry on medium flame for a minutes.
- Add peas, onion, garlic and ginger, continue to fry for a minute.
- Add chopped tomato, turmeric powder and coriander powder.
- Continue to fry for another minute, add bell pepper and sprouts, fry for 30 seconds.
- Now mix vegetables is ready; add millet, rice and dal, continue to fry for couple of minutes.
- Add 3-4 cups of hot water and ½ teaspoon of salt; close the lid, bring to full cooking pressure, reduce to low flame and cook for 7-8 minutes (if you are going to make other than bajra it will take less time to cook about couple of minutes are enough).
- Allow cooker to cool and open. Keep aside.
- Add ghee when the Khichadi is piping hot and also drizzle it with a dash of Garam Masala powder. Now “Bajara Millet/Any Millet khichadi” is ready to be served.
- Transfer this khichadi into serving bowl; decorate with fresh green coriander leaves.
- Serve with Salted Lassi (Mattha).
