“Aaloo Chop” is a popular and beloved snack in many parts of India, especially in Bengal, Bihar, and Odisha. This delicious treat features a spiced mashed potato filling that is coated in a gram flour (besan) batter and deep-fried to golden perfection.
Crispy on the outside and soft on the inside, Aaloo Chop is a comfort food that is often enjoyed with a cup of hot tea, especially during the rainy season or as an evening snack. Aaloo Chop is often served with chutneys or ketchup, making it a delightful and satisfying option for those who crave something crispy.
Ingredients:
- Potato: 4 no. (Medium size)
- Onion: 1 (small size)
- Mustard oil /cooking oil: for frying
- Ginger: 1”piece
- Garlic: 2-3 flacks
- Green chilli: 2no.
- Coriander leaves: 2 tablespoon (chopped)
- Cumin seed: half teaspoon
- Salt: half teaspoon
- Jal-jeera powder: 1 teaspoon
- Ajwain (carom seeds): half teaspoon
- onion seed: ¼ spoons
- Besan (gram flour): half cup
- Water: half cup
- Meetha soda (Soda-bi-carb): 1 pinch
Preparation:
- Boil, peel and mash potatoes. Keep aside.
- Chop garlic, green chilli and ginger into very small pieces. Keep aside.
- Take a bowl. Put Besan, salt, kalongi, ajwain and Meetha soda, put water to make a smooth batter.
Method:
- Heat oil in a frypan, when it smokes add cumin seeds, sputter for few seconds; add onion, garlic, green chilli and ginger, stir fry on high flame for couple of minutes (keep it stirring otherwise it may burn).
- Add mashed potato continue to fry on medium flame for about 2-3 minutes.
- Add green coriander leaf; potato masala is ready. Let it be cool.
- Put jal-jeera powder and salt.
- Divide this potato masala into 6-8 parts.
- Make round shape and press with palm to get tikki shape as shown in photo. Keep aside.
Dip fries the tikki:
- Take kadhai (fry pan), heat oil, let oil to smoke. Pour a drop of batter into the oil.
- If batter comes up, it means right temperature of oil otherwise wait for a while and test again.
- After getting right temperature of oil, dip tikki into batter. (Either helps of your hand or spoon)
- Deep fry all tikki, till golden brown. Keep aside.
- Yummy Aaloo Chop is ready for tea time or any time for children as well as adult.
