Parwal (pointed gourd) do pyaja

“Parwal Do Pyaza” is a flavourful North Indian dish that highlights the unique taste of pointed gourd (parwal) and onions cooked together.

The term “Do Pyaza” refers to the use of onions in two stages and double in quantity —once in the base and again added in larger chunks for texture and sweetness.

In this recipe, parwal is stir-fried with a blend of spices, and the onions enhance both the flavour and body of the dish. Parwal Do Pyaza is a delicious, light, and nutritious option, often served with Chapati or Rice, making it a comforting meal for everyday dining.

Ingredients:

Preparation:

  1.  Wash and Trim the both ends of pointed gourd, cut longitudinally into pieces.
  2. Chop onion longitudinally and cubes, keep aside.

Method:

  1. Heat 2 tablespoon oil in same fry pan; add cube chopped onion. stir fry on high flame till onion become translucent(About 3-4 minutes), take out, Keep aside.
  2. Heat oil in same fry pan add cumin, sputter for few seconds add Parwal stir fry on medium flame until Parwal is half done, (About 5-7 minutes).
  3. Add  longitudinally chopped onion; continue to fry till onion become translucent. (About 3-4 minutes)
  4. Add chilli powder, coriander powder and turmeric powder; continue to cook for couple of minutes.
  5. Add Garam masala powder and cube fried onion; continue to fry for a minute on medium flame.
  6. “Parwal (pointed gourd) do pyaja” is ready to  be Served with “Roti“, “Dost Paratha” or as a side disc..
