Bora (Long beans/Snake beans) stew

Bora is originated from  South of china but it is most popular vegetables in the Philippines and east asian county “Bora Stew” is one of the popular seasonal recipe from Bihar.

Bora it is  known as Yard long beans, Chinese long beans,Snake beans, Asparagus beans, Bodi, Bora, Cowpea beans etc…is  a  summer season produce.

Stewing this veggie is not only a comfort cooking method but the stew is very-very delicious too.

About nutritional value, it is rich in vitamin C, protein, dietary fiber…

Ingredients:

  • Bora (Long beans): 250 gm
  • Onion: 2 no. (Small size)
  • Tomato: 1no. (Medium size)
  • Garlic: 6 flake (medium)
  • Ginger: 2 inch pieces
  • Green chilli: 2 no.
  • Dry whole red chilli: 2 no.
  • Cumin: 1 teaspoon
  • Whole coriander: 1 tablespoon (crushed)
  • Bay leaf: 2 no.
  • Black pepper: 10-15
  • Cinnamon: 1 inch piece
  • Black cardamom: 1 no. (Crushed)
  • Turmeric powder: 1 teaspoon
  • Salt: 1 teaspoon (as per taste)
  • Cooking oil: 2 tablespoon

Preparation:

  1. Cut Bora(Long beans) into 2 inch pieces.
  2. Chop onion into fine slices longitudinally.
  3. Chop tomatoes into small pieces.
  4. Chop ginger and garlic length wise.
  5. Cut green chilli into small pieces.
  6. Break whole red chilli into two or three pieces.

Method:

  1. Take a mixing bowl; put Bora (long beans), sliced onion, garlic, ginger, green chilli, salt, turmeric powder and a tablespoon of oil.
  2. Mix above ingredients with half cup of water and boil it or cook in pressure cooker upto first whistle only and let it cool naturally.
  3. Put rest of oil in a fry pan, when it starts to smoke; add cumin, red chilli, cardamom, cinnamon, bay leaf, crushed cardamom and coriander.
  4. Sputter for few seconds, add chopped tomatoes, stir fry tomatoes on high flame till oil leaves from sides (about 3-5 minutes); add boiled vegetables continue to fry it till liquid dried up.
  5. Decorate with green coriander and fresh red chilli.
  6. “Bora (long beans) Stew” is ready to be served.
