Besan (chic pea flour) Dhokla

  • Seasoning time: 2 minutes.
  • Total time: 27 minutes. 

“Besan Dokla” is to be served freshly prepared but if you refrigerate for 2-3 days and serve it on room  temperature the flavour remains the same. It is one of the popular dish from Indian cuisine History says, it  was invented  in 11th century in Gujarat.

It is prepared as breakfast  or tea time snacks and served with “Green Chutney” and  fried  green chilies…

It can be prepared with many combinations. Here I am choosing “Besan Dokla”, the spongy, salted, fluffy, fermented cake is really easy to cook.

It is full of protein, helps to lose weight; after eating  you will feel full for long.

Ingredients:

For batter:

  • Besan (chick pea flour): 100gm
  • Curd: 100gm
  • Sugar: 1teaspoon
  • Salt: half teaspoon
  • Soda bi carb: 1 pinch
  • eno: 1 teaspoon
  • Lemon juice/vinegar: 1 tablespoon
  • Oil: 1teaspoon
  • Ginger: half teaspoon (Paste)
  • Garlic: half teaspoon (Paste)
  • Red chilli powder: half teaspoon
  • Water: as per requirement

For seasoning:

  • Oil: 1 tablespoon
  • Mustard seed: 1 teaspoon
  • Curry leaves: 10-15
  • Sugar: 1 teaspoon
  • Green chilli: 4-5 no. (Cut into slit)
  • Lemon juice: 1 teaspoon
  • Water: 50gm
  • Coriander leaves: 2 tablespoon (chopped)

Preparation for batter:

  1. In a big bowl, put besan and curd; mix well, prepare smooth thick batter.
  2. Add sugar and salt; Keep aside for 1-2 hours.
  3. Add ginger, garlic paste and red chilli powder in the prepared batter, mix well.
  4. In a small bowl; put a teaspoon of oil, lemon juice, soda bi carb and eno, mix into batter.
  5. Grease a tray with oil. Fill half of the tray with batter.

Method:

  1. Place this tray on cooker grid (with 200 ml water).
  2. Place cooker on high flame with lid on; bring  it to full cooking pressure, reduce the heat on low flame, continue to cook it about 10-15 minutes.
  3. Open cooker immediately. Remove the tray. Dhokla is ready.
  4. Cut Dhokla into cubes

For seasoning:

  1. Heat a small fry pan; put oil, add mustard seed, green chilli, and curry leaves.
  2. Fry it for 2-3 minutes, pour water, sugar and lemon juice; boil it. Put off the flame.
  3. Put this seasoning on the prepared recipe. (Dhokla)
  4. Garnish with chopped coriander leaves.

Dhokla is ready to serve.
