Ganth Gobhi, also known as Kohlrabi or Knol Khol, is a versatile green vegetable that forms the basis of many nutritious dishes in various cuisines around the world.
“Ganth Gobhi ki Sabji” is a simple, wholesome Indian dish that highlights the mild, sweet flavour of this unique vegetable. Typically prepared by sautéing or simmering chopped Ganth Gobhi with a blend of aromatic spices, this sabji is both comforting and satisfying. Ingredients:
- Ganth Gobhi (Kohlrabi or Knol Khol): 400-500 gm (tender)
- Potato: 2 no.(as per requirement )
- Tomato: 1 no.(Medium)
- Garlic: 4-5 cloves.
- Ginger: 1” piece.
- Green chilli: 2 no.
- Coriander powder: 1 tablespoon
- Chilli Powder: 1 teaspoon
- Cumin: 1/2 teaspoon
- Salt: 1 1/2 teaspoon (as per taste)
- Turmeric powder: 1 teaspoon
- Mustard oil: 4 tablespoon
Preparation:
- Peel off Ganth Gobhi and potatoes, cut into slices as in photo, Keep aside.
- Chop Ganth Gobhi green leaf too, if you have, keep aside.
- Chop onion, garlic, ginger, green chilli and tomato, keep aside.
Method:
- Take a fry pan. Heat 2 tablespoon of oil on high flame until smokes; add pinch of turmeric powder and chopped potatoes. Stir fry on medium to low flame for 3-4 minutes; add Ganth Gobhi, continue to fry for couple of minutes, add half quantity of salt, continue for further couple of minutes, take out, keep aside.
- Take 2 tablespoon of oil, heat on high flame in the same fry pan until smokes; add cumin, sputter for few seconds, add ginger, garlic, green chilli, stir fry for a minute.
- Add onion, fry for couple of minutes; add tomatoes, continue to cook for couple of minute or until tomatoes gets messy.
- Add dry masala and remaining salt with 2 tablespoon of water; continue to cook for a minute on medium flame.
- Add Ganth Gobhi green leaf; continue to cook for couple of minutes, add fried Ganth Gobhi and potatoes, continue to cook for another couple of minutes.
- Add 1 cup of water; let it boil for 3-4 minutes or till done. Put off the flame.
- Transfer the prepared vegetables into serving bowl; it is ready to eat with Chapati or “Sattu Onion Missi Paratha” as per your choice.
