Steel Cut Oats Khichadi

Khichadi: A dish in South Asian cuisine, basic ingredients rice and lentils.

But the dish is a modern twist on the classic khichdi, (typically uses rice and lentils as its base) by incorporating steel cut oats instead of rice, the khichdi becomes rich in fiber and protein, making it an excellent choice for a wholesome breakfast or a light dinner.

The steel cut oats, which is further enhanced by a medley of spices, vegetables, and a touch of ghee adding richness.

This versatile recipe can be adapted to include a variety of seasonal vegetables and is perfect for those seeking a healthy, easy-to-digest meal that doesn’t compromise on taste.

Ingredients:

  • Steel Cut Oats: 1/2 cup
  • Mung Dal (Split Green Gram): ½ cup
  • Bay leaf: 1-2 no.
  • Cumin: 1/2 teaspoon
  • Red chilli: 1 no.(optional)
  • Ghee: 3-4 tablespoon
  • Salt: 1/2 teaspoon (as per taste)
  • Turmeric powder: 1/4 teaspoon (optional)
  • Coriander powder: ½ teaspoon
  • Red chilli powder: ½ teaspoon (optional)
  • Vegetables as you like (as cauliflower, beans, carrot, capsicum): 1cup.
  • Fresh peas: 2 tablespoon (Fresh/Frozen)
  • Onion: 1 no. small
  • Tomato:1no. small
  • Ginger: 1” piece
  • Garam masala powder: 2 pinch (optional)
  • Chopped green coriander leaves: 2 table spoon

Preparation:

  1. Clean and wash steel cuts oats and dal, keep aside.
  2. Chop onion, tomato, vegetables and ginger into small pieces, keep aside.

Method:

  1. Heat ghee in a cooker body, add cumin, bay leaf, sputter for few seconds, add cauliflower, beans and carrot, stir fry on medium flame for couple of minutes.
  2. Add onion, fresh peas and ginger, continue to fry for a minute, add bell pepper fry for 30 seconds.
  3. Add steel cut oats and dal, continue to fry for couple of minutes.
  4. Add chopped tomato, turmeric powder and coriander powder.
  5. Add 4 cups of hot water and salt; close the lid, bring to full cooking pressure, put off the flame.
  6. Allow cooker to cool and open. Keep aside.
  7. Add ghee when the Khichadi is piping hot.
  8. Now “Steel Cut Oats Khichadi” is ready to be served.
  9. Transfer this khichadi into serving bowl; decorate with fresh green coriander leaves.
  10. Serve with  Papad and Salted Lassi (Mattha).
