In California, steel-cut oats have become a staple for breakfast menus in many restaurants.
Minimum processing allows steel-cut oats to retain more fiber and nutrients, making them a favoured choice among health-conscious individuals.
I often enjoyed as a warm, comforting bowl of steel-cut oats which is cooked to creamy consistency with water and milk, customised with dry fruits.
you may add your choice of toppings Iike fresh fruits, nuts or a drizzle of honey.
Ingredients:
- Steel Cut Oats: 1cup
- Salt: 1 teaspoon
- Ghee/ Butter: 20-30gm.
- Cranberry : 2 tablespoon
- Cashew Nut: 10-12 no.
- Pecans: 10-12 no.
- Water: 3 cup
- Milk: 1 cup
Method:
- Heat butter in a heavy bottom pan, add steel cut oats; roast on medium flame for couple of minutes, add cashew nuts and pecans, continue to stir fry for a minute or until it gets golden brown in colour.
- Simultaneously in another pot combine the water and milk, bring the mixture to boil, when the mixture starts boiling add fried steel cuts oats.
- Stir the mixture, reduce to low flame (stir occasionally), continue to cook for 10-15 minutes with cover on or until almost all liquid absorbed or until the desired consistency achieved.
- Add salt and cranberry, stir to mix well, put off the flame; transfer to serving bowl or serve piping hot directly, garnish with cranberry/cashew nuts as per your choice.
