Hello everyone

It is time to break your fast and celebrate the auspices occasion with sooooo yummy “Kachche Singhara (Fresh Water Chestnuts) ki Kheer/ Pudding” with chunks of Singhara. In the recipe I add chia seed for extra health benifits  as it contains ‘Omega 3’ and improves the crunchiness. As we know chia is counted as super food and Singhara itself near superfood.

Yes, Singhara (Water chestnut); Jal phal, Triconphal and Paniphal in Sanskrit. The botanical name is Trapa natans.

It grows in ponds of eastern India, west Bengal, Jharkhand and Bihar are example of such regions. Bihar in particular cultivates the fruit extensively in its district of Darbhanga, Madhubani and Samastipur.

You can serve the recipe after meal as a comfort dessert, amazing sweet nutty flavour with loads of nutrients.

Ingredients:

  • Kachche Singhara (Fresh Water Chestnuts)  500 gm
  • Chia seed: 1 tablespoon
  • Milk: 1 liter
  • Sugar: 1/2 cup(as per taste)
  • Ghee (Clarified butter):1 tablespoon
  • Pistachio: 10 no.
  • Almond: 10 no.
  • Green cardamom: 4 nos.

Preparation:

  1. Peel out the Kachche Singhara (Fresh Water Chestnuts). Grate with the help of grater /food processor.
  2. Slice Pistachio, almond. Keep aside.
  3. Make powder of green cardamom. Keep aside.

Method:

  1. Heat ghee in a frypan, when ghee is heated, add grated Singhara.
  2. Fry on medium flame for about 10-12 minutes or until it gets light golden in colour, keep aside.
  3. Boil the milk for 8-10 minutes to make It thicker; add fried Singhara into milk, further boil  on low flame for 4-5 minutes. Add sugar and  let it boil for couple of minutes, add half of dry fruits let it boil for a of minutes. Put off the flame.
  4. After putting the flame off, add chia seed, let it cool (Chia seed will swollen up).
  5. Transfer into serving bowl and garnish with loads of dry fruits on it.
  6. Now “Kachche Singhara (Fresh Water Chestnuts) ki Kheer/ Pudding (Phalahari recipe) ” is ready to serve.
