New mom and working mother/woman leads fast pace of life today. Choosing nutritious foods over junk food is a big challenge these days. I always admired my daughter in law for being such a wonderful mother, who very often prepare “Egg Bhurji/Scrambled eggs(Akuri/Akoori) Pav/Laadi Pav” and similar homemade food for my grand daughter and family and successfully avoids junk food.
On my birthday, she prepared this satisfying breakfast in a matter of minutes. Sizzling hot buttered laadi pav(a type of soft and spongy bread with thin brown but defined crust). Served with delicious egg bhurji.
This dish originated from city of Bharuch in Gujarat, hence the name. It is very popular and favourite street food in western part of India, especially in Mumbai. Mumbaikar add loads of butter and green chilli to prepare this dish, in south India they use curry leaves and in north India they use chat masala. Nowadays everywhere roadside cart(Thelawala) use cheese too.
Healthy, delectable Egg Bhurji is basically the Indian version of scramble eggs; which is high in protein and above all very kids friendly too.

Ingredients:
- Egg: 6 no.
- Butter/ Cooking oil: 2 tablespoon
- Onion: 2 no. (Medium size)
- Tomato: 2 no. (Medium size)
- Corn: 1/4 cup
- Green chilli: 2 no.
- Fresh coriander leaf(chopped): 2 tablespoon
- Garam masala: 1 teaspoon
- Coriander powder: 1 teaspoon
- Turmeric powder: half teaspoon
- Cumin powder : 1 teaspoon
- Saunf (Fennel seed powder): 1 teaspoon
- Salt: 1 teaspoon
- Laadi pav: 2 packet (12 pieces).
Preparation:
- Break eggs into the mixing bowl; whip with spoon or fork, keep aside.
- Chop onion, tomato, coriander leaves and green chilli into small pieces. Keep aside.
- Steam corn, keep aside.
Method:
- Take non stick fry pan, put butter, add chopped onion, stir fry on high flame for couple of minutes or till it gets translucent, add green chilli and corn, continue to fry for a minute.
- Add tomato; continue to cook for 3-4 minutes or until become soft.
- Add coriander powder, turmeric powder, cumin powder and salt, stir well for a minute.
- Add whipped eggs; stir continuously for about couple of minutes, add fennel seed powder.
- Continue to cook until done, put off the flame.
- Garnish with chopped coriander leaf.
- Toast pav with butter just before serving.
- “Egg Bhurji/Scrambled eggs(Akuri/Akoori) Pav/Laadi Pav” ready to be served with buttered pav.
Note:
- You may use capsicum, peas or any vegetables of your choice or without veggies, it is upto you.
