Poha (Beaten Rice)

Most of my cooking are reflected my childhood memories or my  children’s childhood.“Poha” is the food that became habitual and comfort breakfast of my son’s forever.

It is a signature  breakfast in the  state of Rajasthan, Maharashtra, Madhya Pradesh. The preparation differ from state to state; today  it is Rajasthani Style…

Ingredients:

  • Poha (beaten rice):100gm
  • Cauliflower: 50 gm
  • Peas: 50gm (fresh/frozen)
  • Onion: 2 no. (Medium size)
  • Green chilli: 3-4 no.
  • Potato: 1 no. (Medium size)
  • Coriander leaves: 50 gm
  • Ground nut: 50 gm
  • Salt: 1teaspoon
  • Black salt: half teaspoon
  • Chilli powder: half teaspoon
  • Turmeric powder: 1teaspoon
  • Mustard seed: 1teaspoon
  • Oil: 2 tablespoon
  • Lime juice: half Lemon

Preparation:

  1. Chop cauliflower into small pieces.
  2. Chop potato into small pieces and put into a bowl filled with water.
  3. Chop onion and coriander leaves.
  4. Chop green chilli into slit and stuff with little salt.
  5. Wash Poha properly for two times. Soak with little water (About 50 ml/5 table spoon); cover it and leave it for about 10 -15 minutes.
  6. Add salt and turmeric powder into the Poha.

Procedure:

  1. Heat a fry pan with 1 teaspoon oil; fry groundnut for 3-4 minutes on medium low flam, stir continuously till brown colour comes. Keep aside.
  2. Fry green chilli for few seconds. Keep aside.
  3. Add rest oil in the pan; sputter mustard seed, add potato and cauliflower, lower the flame and cover it (about 3-4 minutes).
  4. Stir it; add peas and half of the chopped onion, stir fry for 2- 3 minutes.
  5. When all vegetables are done, add soaked poha with salt and turmeric powder. Stir properly, cover for 2-3 minutes on lower flame.
  6. Put off the flame and leave it for 5 -7 minutes; add rest of the chopped onion, lemon juice, black salt and coriander leaves. stir well.
  7. Decorate with green fry chilli, fried ground nut and Bhujia.
  8. Serve hot.
