Aaloo (potato) chop

“Aaloo Chop” is a popular and beloved snack in many parts of India, especially in Bengal, Bihar, and Odisha. This delicious treat features a spiced mashed potato filling that is coated in a gram flour (besan) batter and deep-fried to golden perfection.

Crispy on the outside and soft on the inside, Aaloo Chop is a comfort food that is often enjoyed with a cup of hot tea, especially during the rainy season or as an evening snack. Aaloo Chop is often served with chutneys or ketchup, making it a delightful and satisfying option for those who crave something crispy.

Ingredients:

Preparation:

  1. Boil, peel and mash potatoes. Keep aside.
  2. Chop garlic, green chilli and ginger into very small pieces. Keep aside.
  3. Take a bowl. Put Besan, salt, kalongi, ajwain and Meetha soda, put water to make a smooth batter.

Method:

  1. Heat oil in a frypan, when it smokes add cumin seeds, sputter for few seconds; add onion, garlic, green chilli and ginger, stir fry on high flame for couple of minutes (keep it stirring otherwise it may burn).
  2. Add mashed potato continue to fry on medium flame for about 2-3 minutes.
  3. Add green coriander leaf; potato masala is ready. Let it be cool.
  4. Put jal-jeera powder and salt.
  5. Divide this potato masala into 6-8 parts.
  6. Make round shape and press with palm to get tikki shape as shown in photo. Keep aside.

Dip fries the tikki:

  1. Take kadhai (fry pan), heat oil, let oil to smoke. Pour a drop of batter into the oil.
  2. If batter comes up, it means right temperature of oil otherwise wait for a while and test again.
  3. After getting right temperature of oil, dip tikki into batter. (Either helps of your hand or spoon)
  4. Deep fry all tikki, till golden brown. Keep aside.
  5. Yummy Aaloo Chop is ready for tea time or any time for children as well as adult.
