Boondi ka laddu

In India gifting your friends and family during festival is very popular. This festive season gift your near and dear ones a basket full of homemade delight ’Boondi ka laddu’, that comes laden with pure ghee (clarified butter) cashew nut and Raisins.

‘Happy holi’

Ingredients:

For boondi batter:

  • Besan: 200 gm.
  • Food Color:
  • Water: ½ cup
  • Ghee (clarified butter): for deep frying

For sugar syrup:

  • Sugar:  200 gm.
  • Water: ½ cup
  • Green Cardamom: 5-6 no.
  • Cashew nuts: 10-12 no.
  • Raisins: 15-20 no.
  • Melon seed: 1 tablespoon

Preparation:

For sugar syrup:

  1. Take a large pan; pour sugar as well as water in it, and Let the syrup boil for 3-4 minutes.
  2. To test the readiness of sugar syrup, pour a little amount of sugar syrup in a cup ¼ filled with water, if it get dissolved immediately, continue boiling for a minute and put off the flame, if it doesn’t dissolve immediately means it is ready, put off the flame.
  3. Add cardamom powder, raisin and cashew nut. Keep aside.

For boondi:

  1. Take a wide vessel; Put besan add water in small quantity to make a smooth batter. It should neither be too thin nor thick just like dosa batter, add color as per your choice. (See photo…)
  2. Take a fry pan, Heat ghee on medium heat (to check if oil is ready, pour   batter, if it comes up slowly means it is ready, if doesn’t wait for couple of minutes ant test again).
  3. Take a ladle full of batter on boondi ladle/maker and gently tap it. Droplets of batter will fall into the hot ghee and beautiful round shaped boondi will appear. (If boondi is not round in shape and get tail end means, the batter is thin add bit of gram flour and check again) Fry for a minute and take out, put it into sugar syrup. Repeat the process for rest of the batter.
  4. Mix them properly let it cool till you will able to bind the boondi mixture in the shape of laddu by help of your fist.
  5. Take one handful mix; shape the mixture in laddu by using your hand/fist, depending upon size of laddu 15-20 laddu will be ready.
  6. Decorate with Chandi ka verak, delicious laddu is ready to be served.

Steamed rice

When we are in hurry and hungry, would like to go with traditional meal, it is possible with steamed rice.

Steamed rice is staple diet in India, especially in south India, Orissa, and west Bengal etc.

Ingredients:

  • Basmati rice: 1 cup
  • Water: 2 cup
  • Lemon juice: 1 teaspoon (optional)

Preparation:

  1. Clean and wash rice. Soak it into double quantity of water Keep aside for 15-20 minutes.

Method:

  1. Cook the rice in rice cooker or pressure cooker along with lemon juice. (You can directly cook on stove on lower flame till rice is done.)
  2. Steamed rice is ready to be served.

Meethi boondi

The joy of sharing sweets during festival has no bounds. Holi means variety of sweets and namkin, fritters, chat etc…

Today I am going to upload the ‘Meethi boondi’…

Excellent flavor and eye catching…

‘Meethi boondi’ is an authentic sweet of Indian cuisine. In the festival of Holi, it is used as a Prasad in the Holika dahan day along with murmura (puffed rice).

Ingredients:

For boondi batter:

  • Besan: 200 gm.
  • Rice flour: 1 table spoon
  • Meetha soda/cooking soda: 1 pinch
  • Food Color:
  • Water: ½ cup
  • Ghee (clarified butter): for deep frying

For sugar syrup:

  • Sugar:  200 gm.
  • Water: ½ cup
  • Green Cardamom: 5-6 no.
  • Cashew nuts: 10-12no.
  • Raisins: 15-20 no.
  • Melon seed: 1 tablespoon

Preparation:

For sugar syrup:

  1. Take a large pan; pour sugar as well as water in it, and Let the syrup boil for 3-4 minutes. When you touch it; between your index finger and thumb and pull it apart, it should form a string. Put off the flame. Add cardamom powder, raisin and cashew nut. Keep aside.

For boondi:

  1. Take a wide vessel; Put Besan, rice flour and soda, add water in small quantity to make a smooth batter. It should neither be too thin nor thick just like dosa batters (flowing consistency) add color as per your choice. (See photo…)
  2. Take a fry pan, Heat ghee on medium heat (to check if oil is ready pour batter ,if it comes up slowly means it is ready, if doesn’t wait for couple of minutes ant test again).

Boondi raita

Raita is one of the most popular dishes from Indian cuisine. This is easy to prepare can be made in quick time, goes well with poori, pulao, biryani, paratha.

Including this raita in your meal will make the meal more enjoyable. Above all this preparation is full of calcium and protein.

Ingredients:

  • Boondi: ½ cup
  • Curd (Yogurt): 1 cup
  • Cumin seed (roasted powder): 1 teaspoon
  • Salt: half teaspoon
  • Sugar: ½ teaspoon (optional)
  • Chili powder: ½ teaspoon
  • Fresh mint leaves: 1 teaspoon
  • Green chili: 1 no.(optional)

Preparation:

  1. Soak the boondi into hot water for couple of minutes, discard the water. Keep aside.
  2. Chop mint leaves and green chili keep aside.

Method:

  1. Take a mixing bowl.
  2. Put the curd, salt, cumin seed powder, chili powder, green chili and chopped mint leaves into the bowl.
  3. Mix them well.
  4. Add soaked boondi into the curd, mix well and put into serving bowl.
  5. Boondi raita is ready. Sprinkle the little cumin powder and chili powder over the prepared raita.
  6. You can serve this as a side dish too.

Banana flower Gatte ka masala

This is one of the variations from ‘Besan Gatte ki sabji, This is Very delicious and spicy, serve this with plane rice or missy roti.

Ingredients:

For Gatte:

  • Besan: 1cup
  • Banana flower: 1 no. (Medium size), One cup boiled
  • Poppy seed (khus-khus): 1 tablespoon
  • Turmeric powder: half teaspoon
  • Red chili powder: 1 teaspoon
  • Garlic paste: half teaspoon
  • Salt: 1 teaspoon
  • Roasted cumin seed powder: 1 teaspoon
  • Mustard oil/cooking oil: 1 tablespoon

For masala:

  • Cumin seed: half teaspoon
  • Kalonji (nigella sativa): ¼ teaspoon
  • Bay leaf: 1 no.
  • Red chili: 1 no.
  • Garlic paste: half teaspoon
  • Ginger paste: 1 teaspoon
  • Onion: 2 (Medium size)
  • Tomato: 2 no. (Medium size)
  • Green chili: 2 no.
  • Ginger: 1 teaspoon (paste)
  • Coriander powder: 1 teaspoon
  • Garam masala powder: half teaspoon
  • Coriander leaf: 2 table spoon (chopped)
  • Red chili powder: 1 teaspoon
  • Ghee (Clearfield butter): 1 teaspoon

Preparation:

  1. Cut 1 onion and 1 tomato into small pieces, Keep aside.
  2. Make wet masala from another onion, tomato, ginger and garlic with help of grinder, keep aside.
  3. Slit green chili, keep aside.

Method:

  1. Take one big ball, put Besan, banana flower, ½ tea spoon salt, 1teaspoon oil, turmeric powder, chili powder, roasted cumin powder, garlic paste, ginger paste, poppy seed and make the dough like roti dough. Due to moist banana flower, for making dough, water may not be needed most of the time but if required sprinkle some water.
  2. Divide this dough into 2 parts. (You can make more as per your wish), Make it like stick by rolling it.
  3. Boil 3 cups of water with 1 teaspoon oil. Put both rolls into the boiling water in the medium flame and boil it for ~ 10 minutes.
  4. Remove it from the water and allow to cool, Cut it into small pieces (it is called “Gatte”).
  5. Take a fry pan and heat 50 ml oil, when it starts to smoke add boiled and cut Gatte in it.
  6. Dip fry this, and remove from the fry pan. Keep aside.

Making masala:

  1. Keep the fry pan on the flame. Pour oil.
  2. After heating, add bay leaf, cumin seed, Kalonji and red chili, sputter it for few seconds.
  3. Add onion; fry it on high flame till onion gets light brown in color.
  4. Add tomatoes; fry till oil separates from it.
  5. Add wet masala, continue to fry till oil separates from the masala, add half spoon of salt, chili powder, coriander powder, slit green chili and turmeric powder, and Fry it for 1-2 minutes. Add 1 cup of water slowly.
  6. After boiling add fried Gatte, lower the flame, Allow to boil for couple of minutes, add Garam masala powder and ghee cover the lid and put off the flame. Keep covered for 5 minutes.
  7. Pour it into the serving bowl. Decorate with coriander Leaves.
  8. Now Banana flower Gatte ka masala is ready to serve.Serve this with plane rice or missy roti.
