Muli salad (radish salad)

The summer is on its way; salads are the natural way for summer diet, so make them your best friend. Preparing ‘Radish salad’ for the meal is easier than you think, just grate and season with little salt and chat masala, you will really love it.

Ingredients:

  • Muli (radish): 100gm.
  • Green chili: 1 no.
  • Green coriander leaf: 10 gm.
  • Lemon: ½ no.
  • Pomegranate aerial: ¼ cup
  • Chat masala: ¼ cup
  • Salt: ¼ teaspoon

Preparation:

  1. Wash and peel radish, grate the radish, put salt and mix well, keep aside for 10-15 minutes, then squeeze gently and take out extra juice.
  2. Discard the seed of fresh green chili and chop into fine pieces, keep aside.
  3. Chop green coriander leaves, keep aside.

Method:

  1. Take a mixing bowl, add all ingredients, and mix well,add lemon juice just before serving, now tasty and delicious Muli salad (radish salad) is ready to serve with lunch.

Pudina raita (mint thayir pachadi/pachari)

Summer is going on its peaks and so does you your efforts to protect yourself from sun damage? You rely on sun protection methods like sun glasses, hats, but still you are unprotected; so you must add ‘pudina pachari’ every day and for real protection.

It is south Indian dip/raita traditionally served as a side dish of breakfast as well as in the meal.

Enjoy the real taste of pudina…

Ingredients:

  • Pudina (mint leaves): 100 gm.
  • Curd: 1 cup (100-150 gm.)
  • Salt: half teaspoon
  • Mustard seed: ¼ teaspoon
  • Cumin: ½ teaspoon
  • Split black gram: ½ teaspoon
  • Curry leaves: 8-10 no.
  • Asafoetida: 1 pinch
  • Oil: 1 teaspoon
  • Red chili: 1-2 no.
  • Dried coconut: chop into slice

Preparation:

  1. Clean and wash the mint leaf, grind coarsely, keep aside.

Method:

  1. Add the curd and salt into grounded paste of mint leaf blend them and transfer into serving bowl and pour the seasoning on it.

Seasoning:

  1. Take a small fry pan, put oil and heat on high flame, when smoke begins to come, add mustard seed, whole red chili, split black gram cumin and sliced coconut. Sputter it for few seconds, Put off the flame. Add asafetida. Spread this seasoning all over the prepared raita.Pudina raita (mint thayir pachadi/pachari) is ready to serve.

Onion cucumber raita

A little effort can keep you healthy even during summer, so hydrate yourself to take a lot of water and consume onion and cucumber daily ,here is the recipe to prepare ‘onion and cucumber raita.

You will surprise to see that your skin will stay soft and moisturized as well.

Ingredients:

  • Onion: 1 no.
  • Cucumber: 1 no.
  • Green chili: 1 no.
  • Curd (Yogurt): 2cup
  • Cumin seed (roasted powder): 1teaspoon
  • Salt: ¼ teaspoon
  • Kala namak: ¼ teaspoon
  • Chili powder: ¼ teaspoon

Preparation:

  1. Discard the both ends of cucumber; you can peel of the cucumber, as per your wish. Grate the cucumber, keep aside.
  2. Chop onion into small pieces, keep aside.

Method:

  1. Take a mixing bowl; Put the curd, salt, cumin seed powder and chili powder into the bowl.
  2. Mix them well; add grated cucumber, green chili and chopped onion, Mix well and put into serving bowl.

Chana dal (split Bengal gram) & vegetable salad

Salad might not be everyone’s favorite but for those who are trying to lose weight, here is recipe …

Come up with Chana dal (split Bengal) gram & vegetable salad, which is rich in protein and vitamins should be consumed regularly for multiple health benefits.

Here I used blanched cabbage leaf, which enhance the plating and brings the hunger, I used exotic Carambola (star fruit), which gives the rich dietary fiber and vitamin c.

Ingredients:

  • Chana dal: 50 gm
  • Carambola (star fruit):1 no.
  • Tender Cabbage leaf: 8-10 no.
  • Spring onion: 20 gm.
  • Cucumber: 50-60 gm. (1 no.)
  • Carrot: 20 gm.
  • Radish: 20 gm.
  • Tomato: 50 gm
  • Green chili: 2 no.
  • Coriander leaves: 20 gm.
  • Salt: ½ teaspoon
  • Lemon: 1 no.

Preparation:

  1. Soak chana dal for at least 3-4 hours.
  2. Blanch (put cabbage leaf into boiled water for couple of minutes, remove and put into normal water to retain the color of the leaf) cabbage leaf and keep aside.
  3. Chop all ingredients (spring onion, Carambola, radish, tomato, green chili and coriander leaves) into small pieces, keep aside.
  4. Grate carrot, keep aside.

Method:

  1. Take a mixing bowl; put chopped and grated ingredients into bowl. Add salt and lemon juice into it, keep aside.
  2. Spread blanched cabbage leaf and put the prepared and mixed salad on the leaf, again spread coriander leaves for decoration see the photo.
  3. Chana dal (split Bengal) gram & vegetable salad is ready to be served with meal.

Pomegranate raita

Pomegranate raita is full of flavor, it is simply delicious; children like this due to its color. For health conscious people this will change the mood, you can take this as a breakfast or side dish of any meal. It is known that fruits and dairy products reduce the risk of Alzheimer’s. It takes only few minutes to prepare.

Ingredients:

  • Pomegranate: 1no.
  • Curd (Yogurt): 1 cup
  • Black pepper powder: 1teaspoon
  • Salt: half teaspoon
  • Sugar: 1 teaspoon
  • Walnut: 5-6 no.
  • Dry grapes: 15-20 no.
  • Mint leaves: 1 tablespoon
  • Green chili: 1no. (Optional)

Preparation:

  1. Take out pomegranate areal, keep aside.
  2. Chop walnut and mint leaves roughly.

Method:

  1. Blend the curd and transfer into mixing bowl, add salt, Black pepper powder salt and sugar into it.
  2. Mix them well, Add walnut, dry grapes, pomegranate areal and mint leaves; mix well and put into serving bowl.
  3. Now Pomegranate raita is ready, this is the complete breakfast in the morning.
  4. You can serve this as side dish too.
