Chana dal (split Bengal gram) & vegetable salad

Salad might not be everyone’s favorite but for those who are trying to lose weight, here is recipe …

Come up with Chana dal (split Bengal) gram & vegetable salad, which is rich in protein and vitamins should be consumed regularly for multiple health benefits.

Here I used blanched cabbage leaf, which enhance the plating and brings the hunger, I used exotic Carambola (star fruit), which gives the rich dietary fiber and vitamin c.

Ingredients:

  • Chana dal: 50 gm
  • Carambola (star fruit):1 no.
  • Tender Cabbage leaf: 8-10 no.
  • Spring onion: 20 gm.
  • Cucumber: 50-60 gm. (1 no.)
  • Carrot: 20 gm.
  • Radish: 20 gm.
  • Tomato: 50 gm
  • Green chili: 2 no.
  • Coriander leaves: 20 gm.
  • Salt: ½ teaspoon
  • Lemon: 1 no.

Preparation:

  1. Soak chana dal for at least 3-4 hours.
  2. Blanch (put cabbage leaf into boiled water for couple of minutes, remove and put into normal water to retain the color of the leaf) cabbage leaf and keep aside.
  3. Chop all ingredients (spring onion, Carambola, radish, tomato, green chili and coriander leaves) into small pieces, keep aside.
  4. Grate carrot, keep aside.

Method:

  1. Take a mixing bowl; put chopped and grated ingredients into bowl. Add salt and lemon juice into it, keep aside.
  2. Spread blanched cabbage leaf and put the prepared and mixed salad on the leaf, again spread coriander leaves for decoration see the photo.
  3. Chana dal (split Bengal) gram & vegetable salad is ready to be served with meal.

Pomegranate raita

Pomegranate raita is full of flavor, it is simply delicious; children like this due to its color. For health conscious people this will change the mood, you can take this as a breakfast or side dish of any meal. It is known that fruits and dairy products reduce the risk of Alzheimer’s. It takes only few minutes to prepare.

Ingredients:

  • Pomegranate: 1no.
  • Curd (Yogurt): 1 cup
  • Black pepper powder: 1teaspoon
  • Salt: half teaspoon
  • Sugar: 1 teaspoon
  • Walnut: 5-6 no.
  • Dry grapes: 15-20 no.
  • Mint leaves: 1 tablespoon
  • Green chili: 1no. (Optional)

Preparation:

  1. Take out pomegranate areal, keep aside.
  2. Chop walnut and mint leaves roughly.

Method:

  1. Blend the curd and transfer into mixing bowl, add salt, Black pepper powder salt and sugar into it.
  2. Mix them well, Add walnut, dry grapes, pomegranate areal and mint leaves; mix well and put into serving bowl.
  3. Now Pomegranate raita is ready, this is the complete breakfast in the morning.
  4. You can serve this as side dish too.

Makhana (fox nut) ka raita

It has unimaginable health benefits, curd is rich in calcium, protein and above all it is the integral part of Indian meal.

Ingredients:

  • Makhana (fox nut): 50 gm
  • Curd (Yogurt): 200-250 gm
  • Milk: 100ml.
  • Cumin seed (roasted powder): 1 teaspoon
  • Chili powder: ½ teaspoon
  • Kala namak: ½ teaspoon
  • Green chili: 1 no (optional)
  • Mint leaves: 10-12 leaves
  • Salt: half teaspoon
  • Sugar: 1 teaspoon (optional)
  • Dry grapes: 20-30 gm

Preparation:

  1. Cut makhane into 2-3 pieces, keep aside.
  2. Chop green chili and mint leaves, keep aside.
  3. Dry roast makhana on low flame till gets crisp, put into the milk for soaking for half an hour or keep in refrigerator.

Method:

  1. Blend the curd on high speed, pour this blended curd into mixing bowl; add salt, Chili powder, Kala namak, Green chili, Mint leaves , Sugar, Dry grapes and cumin seed powder into the bowl, mix them well. Add soaked makane into the curd mixture, Mix well and put into serving bowl. Decorate with mint leaves and dry grapes. Makhana (fox nut) ka raita is ready.

Boondi raita

Raita is one of the most popular dishes from Indian cuisine. This is easy to prepare can be made in quick time, goes well with poori, pulao, biryani, paratha.

Including this raita in your meal will make the meal more enjoyable. Above all this preparation is full of calcium and protein.

Ingredients:

  • Boondi: ½ cup
  • Curd (Yogurt): 1 cup
  • Cumin seed (roasted powder): 1 teaspoon
  • Salt: half teaspoon
  • Sugar: ½ teaspoon (optional)
  • Chili powder: ½ teaspoon
  • Fresh mint leaves: 1 teaspoon
  • Green chili: 1 no.(optional)

Preparation:

  1. Soak the boondi into hot water for couple of minutes, discard the water. Keep aside.
  2. Chop mint leaves and green chili keep aside.

Method:

  1. Take a mixing bowl.
  2. Put the curd, salt, cumin seed powder, chili powder, green chili and chopped mint leaves into the bowl.
  3. Mix them well.
  4. Add soaked boondi into the curd, mix well and put into serving bowl.
  5. Boondi raita is ready. Sprinkle the little cumin powder and chili powder over the prepared raita.
  6. You can serve this as a side dish too.

Tomato radish salad (stir fry)

The taste of this salad is awesome. Tomatoes are packed with carotenoids and lycopene, this salad is an excellent source of vitamins A, C & K.

Go ahead, enjoy the salad.

Ingredients:

  • Tomatoes: 2no. (100-150 gm.)
  • Radish: 1no. (100-150 gm.)
  • Green chili: 2 no. (As per taste)
  • Olive oil/refined oil: 1 tablespoon
  • Salt: 1 teaspoon
  • Chili powder: ½ teaspoon
  • Turmeric powder: ¼ teaspoon
  • Coriander powder: ¼ Teaspoon
  • Mustard seed: ¼ teaspoon
  • Asafoetida: 1 pinch

Preparation:

  1. Chop tomatoes, radish, in to cube shape, keep aside.
  2. Discard the seed of green chili and chop into small pieces.

Method:

  1. Take a wok, heat oil, put mustard seed, and sputter for few seconds.
  2. Add asafoetida and radish, Fry on high flame for couple of minutes then add green chili and tomatoes, continue to Fry on high flame for couple of minutes , add salt, turmeric powder, chili powder and coriander powder. Stir well on high flame, put off the flame, and transfer into serving tray.
  3. Crunchy Tomato radish salad is ready. Serve immediately with stuff paratha.
