Lemon pickle (sweet and sour) Nimboo ka khatta meetha achar

Authentic way of prepared lemon pickle, you won’t get any big bazaar or metro mall stores. There is no matter how much variety of pickles available in the market, but we always prefer homemade and authentic preparation.

The tastiest way to make your meal delicious, Serve this ‘Lemon pickle (sweet and sour) Nimboo ka khatta Meetha achar’.

Ingredients:

  • Lemon: 250gm
  • Sugar: 250 gm.
  • Salt: 10 gm
  • Fenugreek seed: ½ teaspoon
  • Red chili powder: 10 gm
  • Turmeric powder: 5 gm
  • Asafetida: 1 pinch

Preparation:

  1. Chop lemon into four pieces, keep aside.
  2. Dry roast fenugreek seed, coarsely grind them. Keep aside.

Method:

  1. Take a big mixing bowl/earthen pot, Put lemon pieces along with turmeric powder, and salt  mix properly with spatula (don’t use your hands), cover it and keep it at dry place. Keep it for 1-2 days (stir once or twice in a day.) After 1-2 days the pieces become soft, you can put it into sun for a day or two with by covering with thin cotton cloth.
  2. Make “three string” of sugar syrup (sugar and ½ cup water bring it to boil and let it boil for 8-10 minutes).
  3. Add asafoetida, roasted fenugreek powder and chili powder with prepared lemon (discard the water if there is any), bring it to boil and put off the flame. Lemon pickle (sweet and sour) Nimboo ka khatta meetha achar is ready after it comes to normal temperature.
  4. Store this pickle in a glass container. Serve with any meal.

Karela (bitter gourd) pickle

Pickles are served in Indian meal either lunch or dinner. It is also served with paratha since ancient time. Here is the recipe of bitter gourd pickle, bitter gourd is not liked by all, but I loved all the recipes made with bitter gourd. Ingredients:

  • Karela (bitter gourd): 500 gm
  • Salt: 30 gm
  • Black rock salt: 5 gm
  • Funnel seed: 10 gm (roughly grind)
  • Ajawine: 10 gm
  • Fenugreek seed powder: 10 gm
  • Onion seed: 5 gm
  • Asafetida: 1 pinch
  • Turmeric powder: 5 gm
  • Red chili: 5 gm.
  • Garam masala powder: 10 gm
  • Mustard powder: 30 gm
  • Mustard oil: 200 gm

Preparation:

  1. Clean and wash bitter gourd.  Dry those in the sun for 4-5 hours, slit it keep aside.

Method:

  1. Take a big mixing bowl. Put all powder masala in it; mix well with some amount of oil.
  2. And make thick paste. Now stuffing is ready.
  3. Fill this masala paste into each bitter gourd carefully and properly; Put this stuff bitter gourd to dry into the sun for 4-5 hours. After that dip this into oil, one by one and store it into the glass jar, put remaining oil. Cover it with thin cotton cloth.
  4. Next day put this jar outside into the sun for drying for another 8-10 days.
  5. Note: shake the jar daily, so that oil coating is going all around the bitter gourd.
  6. Now, mouth watering bitter gourd pickle is ready to serve.
  7. Remove the cotton cloth and put the lead.
  8. This you can serve with aaloo paratha, chapati, rice etc.

Amla ka achar (Instant goose berry pickle)

An instant recipe always reduces the time spent in the kitchen. This is very easy to make recipe; teach your kids to make the pickles and the properties of wonder food amla.

Amla nourishes the brain, strengthens the lungs, increases skin health, promotes healthier hair, act as body coolants, flushes out toxins, improves muscles tones and acts as an antioxidants.

Ingredients:

  • Amla Big: 4 no. (100gm)
  • Turmeric powder: ¼ teaspoon
  • Mustard oil: 5 ml (1 teaspoon)
  • Pickle masala powder: 2-3 teaspoon (as per taste)

Preparation:

  1. Clean and wash amla.  Dry them with kitchen towel, grate/cut into pieces, discard seeds. Keep aside.

Method:

  1. Take a bowl. Put all ingredients into the bowl; mix well with spoon, instant Amla pickle is ready. Transfer into glass jar.
  2. Enjoy the pickle with your meal.
  3. Note: consume this pickle within a week or can store into the refrigerator for more than a week.

Nimboo ka (khatta- Meetha) bharwan aachar / Stuffed (sweet and sour) lemon pickle.

Pickles are very popular in India. The goodness of lemon is packed in it that to without using oil; it is good for digestion.

We had been eating these pickles since our childhood. The taste is awesome; enjoy the sweet, sour and spicy taste of pickle…

Ingredients:

  • Lemon: 250 gm
  • Salt: 30 gm
  • Ajawine: 5 gm
  • Turmeric powder: 5 gm
  • Garam masala powder: 5 gm
  • Nutmeg powder: 1 pinch
  • Sugar/Jaggery: 20-30gm.

Preparation:

  1. Clean and wash lemon.  Dry them with kitchen towel.
  2. Slit the lemon into four without separating them as shown in photo, keep aside.

Method:

  1. Take a big mixing bowl. Put all powder masala with salt and sugar; mix well, now stuffing is ready.
  2. Fill this masala powder into each lemon carefully and properly; Put this stuff lemon into dry jar, close the lid and keep inside for 24 hours or one day.
  3. Next day  open the lid tie a clean and thin cotton clothe instead of lid, put this jar outside into the sun for drying for another 8-10 days.
  4. Note: shake the jar daily for proper liquid and solid mixing.
  5. Now, mouth watering “Nimboo ka (khatta- Meetha) bharwan aachar / Stuffed (sweet and sour) lemon pickle” is ready to use.
  6. Remove the covering clothe put the lid back. Keep it in dry and cool place for storage, can be used for several months.
  7. This can be served with aaloo paratha, chapati, rice etc.

Pickle masala powder

We don’t need to buy masala powder from outside!

Here I am going to upload daily one recipe for different masala powder.

These are easy to make and guarantee of purity. They are healthy and delicious. The ingredients to be used are already in your kitchen.

You can store this masala for 2-3 months in cool and dry place in the glass jar or air tight container, use to make instant pickles that you consume within a week.

For example take 2-3 goose berry (amla), cut/ grate into small pieces, put masala and little oil. Crunchy pickle is ready. You may cook achari sabji with this masala.

Ingredients:

  • Salt: 1 tablespoon
  • Red chili powder: 2 tablespoon
  • Fenugreek seed (split fenugreek): 1 tablespoon
  • Yellow mustard seed (split mustard seed): half tablespoon
  • Asafoetida: half teaspoon
  • Fennel seed: 1 teaspoon

Preparation:

  1. Roughly grind Fenugreek seed and Yellow mustard seed .keep aside.
  2. (Split fenugreek and split mustard seed are easily available in the store.)

Method:

  1. Take a mixing bowl, put all Ingredients together. Mix well
  2. You can make instant pickle immediately with this masala.
  3.  Store this masala into air tight container for 5-6 months.
  4. Your pickle masala is ready at home.
