Sattu ka laddu

Since it is rich in proteins, sattu is beneficial for health and well being of growing kids. Sattu is prepared by one of the healthiest cooking method that is “roasting”; in this the nutrients value remains intact and can be stored for months.

Making chana ka sattu is a time taking process; I used here readymade sattu flour from Bihar but if you don’t have, just grind the roasted chana dal to fine powder. Sieve it, use it.

“Sattu laddu” is very easy to prepare it does not need to be cooked or fried, just add Indian spices, green cardamom and sugar powder or Jaggery and some dry fruits.

Ingredients:

  • Sattu (roasted chana dal powder):100 gm
  • Unsalted butter/Ghee: 50 gm.
  • Sugar: 80-100gm
  • Green cardamom: 1- 6 no.
  • Cashew nut: 10-15 no.
  • Almond: 10-15 no.
  • Pistachio: 10-15 no.
  • Saffron: 1 pinch
  • Milk: 1 -2 tablespoon

Preparation:

  1. Grind green cardamom to make powder, keep aside.
  2. Slice dry fruits thinly, keep aside.
  3. Grind sugar to make fine powder, keep aside. Soak the saffron into tablespoon milk for 10-15 minutes.

Method:

    1. Take pan melt butter: add sattu, powder sugar, green cardamom powder and sliced dry fruits; and mix all things properly along with saffron milk. (Add more milk to reach the binding consistency if needed).
    2. Take one handful mix; shape the mixture in round (laddu) by using your hands, depending upon size of laddu 10-12 laddu will be ready.

Raw papaya with peanut

This ‘Raw papaya with peanut ‘recipe gives me the confidence for any occasions either daily meal or kitty party. The recipe is focused on ingredient peanut and preparation technique which takes less time in kitchen. The crunchy peanut taste in raw papaya is so yummy…

Ingredient:

  • Raw papaya: 300 gm
  • Madras onion: 4-5 no.
  • Garlic: 4-5 flakes
  • Cooking oil: 2 tablespoon
  • Turmeric powder: ½ teaspoon
  • Coriander powder: ½ teaspoon
  •  Salt: 1 teaspoon (as per taste)
  • Peanut: 1 tablespoon
  • Mustard seed: ½ teaspoon

Preparation:

  1. Dry roast peanut, discard the skin of peanut, roughly ground, and keep aside.
  2. Chop the onion and garlic, keep aside.
  3. Peel off papaya, discard the seeds and chop into small cubes, boil/ microwave the chopped papaya, keep aside.

Method:

  1. Take a heavy bottom pan. Heat oil, add mustard seed, sputter for few seconds; add a pinch of turmeric powder, and put chopped onion and garlic, stir fry for 2
  2. minutes on high flame till it gets translucent, add boiled raw papaya, sauté on medium flame, and cover for few minutes (~ 4-6 minutes).
  3. Add coriander powder, turmeric powder, salt and roughly grind peanut.  Stir fry for 2 minutes, now raw papaya with peanut is ready to serve.
  4. Note: heavy bottom pan works better. This is served with rice or chapati/ paratha.

Rasam powder

Ingredients:

  • Mixed dal (Split pigeon peas, chana dal, urad dal and mung dal): 2 tablespoon
  • Red chili powder: 2 tablespoon
  • Cumin: 2 tablespoon
  • Black pepper: 2 tablespoon
  • Coriander powder: 2 tablespoon
  • Turmeric powder: 1 tablespoon
  • Asafoetida: ¼ teaspoon

Method:

  1. First grind cumin, mixed dal and black pepper on full speed, add remaining ingredients and grind to fine powder. Rasam powder is ready to store.
  2. When I made Rasam from this homemade rasam powder, thanks to the aroma, it does not take long time for my neighbor to know I am cooking rasam; it is amazing blend of hot spices with maximum aroma and flavor.
  3. An easy appetizer cooked easily with this spiced powder. I would like to suggest make it in small quantity, to retain the freshness of the aroma and flavor as with time it loses its aroma.

General Preparation for any combination mentioned above:

  1. Take a wide vessel; pour ingredients of your choice and mix well.

Method:

  1. Add water/ curd/ paneer water in small quantity and knead them, if required, put some more water till the dough becomes soft (The dough can be made in food processor also) Cover and Keep aside, to be used after 5 -10 minutes.

Bhuna jeera powder (roasted cumin powder)

For years masala have been added for flavor in the food, Indian food is not complete without the spices; the aroma of spices makes the food tempting.

Bhuna jeera is used as a garnish on top of curd (yogurt), raita, drinks, fruits salad and many more. Cumin is very good for stomach either roasted or raw. Roasted cumin enhance flavors and taste of your food. It has immense health benefits.

Ingredients:

  • Cumin: half cup

Preparation:

  1. Take a fry pan, dry roast the cumin on the medium low frame.
  2. Keep aside; allow cooling to room temperature.

Method:

  1. Grind till become powder.
  2. Store this Bhuna jeera powder (roasted cumin powder) into air tight container, for months.
