Melon seed biscuit/cookie

Ingredients:

  •  Maida (all-purpose flour):1 cup
  • Ghee: half cup
  • Sugar: half cup (powder)
  • Baking powder: half teaspoon
  • Melon seed: half cup
  • Green cardamom: 6-8 no.

Preparation:

  1. Sieve Maida and baking powder together. (3-4 times)
  2. Discard cardamom skin and grind with the sugar, till get fine powder. Keep aside.

Method:

  • Take a big mixing bowl, put sugar and ghee in it.
  • Mix it well with the help of hand blender/food processor or hand. (About 4-5 minutes).
  • Add Maida along with baking powder and melon seed.
  • Mix well, kneed them well to make dough like chapati dough.
  • Now biscuit dough is ready, Divide dough into 2 parts and make balls.
  • Roll the ball in1/4 inch thick; cut it longitudinally with the help of knife. As shown in photo.
  • Now raw biscuit is ready to bake into oven.
  • Preheat oven at 200 degree centigrade.
  • Place the raw biscuit in the baking tray like photo.
  • Bake the biscuit for 7-8 minutes. Allow it to cool.
  • Now, Melon seed biscuits ready to serve.

Kaju (cashew nut) cookie/biscuit

Ingredients:

  •  Maida (all-purpose flour):1 cup
  • Ghee: half cup
  • Sugar: half cup
  • Baking powder: half teaspoon
  • Kaju (cashew nut): half cup
  • Green cardamom: 6 no

Preparation:

  1. Sieve Maida and baking powder together. (3-4 times)
  2. Fry cashew nut with one teaspoon of ghee till light pink color.
  3. Let it cool to room temperature. Keep aside.
  4. Take 5-6 fried cashew nuts, break them into 4 pieces and keep aside for decoration.
  5. Grind roughly rest of the cashew nuts and keep aside.
  6. Discard cardamom skin and grind with the sugar, till get fine powder. Keep aside.

  1. Take a big mixing bowl, put cardamom sugar powder and ghee in it.
  2. Mix it well with the help of hand blender/food processor or using your palm. (About 4-5 minutes).
  3. Add Maida along with baking powder and roughly grind cashew nut.
  4. Mix well, kneed them well to make dough like chapati dough.
  5. Now biscuit dough is ready, Divide dough into 2 parts and make balls.
  6. Roll the ball in1/4 inch thick; cut into diamond shape with the help of knife.
  7. Stick one cashew nut piece on the top of raw biscuit.
  8. Now raw biscuit is ready to bake into oven.
  9. Preheat oven at 200 degree centigrade for 3-4 minutes.
  10. Place the raw biscuit in the baking tray as shown in photo.
  11. Bake the biscuit for 7-8 minutes.
  12. Now, Kaju (cashew nut) biscuit is ready.
  13. Allow to cool before you serve.

malai/fresh cream elaechi (Green cardamom) cake

Ingredients:

Preparation:

  1. Sieve Maida and baking soda and salt together. (3-4 times)
  2. Grind sugar and make powder. Keep aside.
  3. Take a baking tray, put half teaspoon of ghee.
  4. Apply ghee all around the container.
  5. Sprinkle one teaspoon of Maida over it. Discard extra Maida. Keep aside.
  6. Take a big mixing bowl, put sugar and malai in it.
  7. Mix it well with the help of hand blender/food processor. (About 4-5 minutes).
  8. Add Maida along with baking soda and salt.
  9. Mix well, if needed add little amount of milk.
  10. Make a smooth batter.
  11. Now cake batter is ready.

Method:

  1. Choose the size of baking tray such that when batter is put it gets half filled only, as after baking its volume gets nearly doubled.
  2. And bake it into pre heated OTG at 220 degree centigrade for about 30-35 minutes.
  3. Bake until toothpick inserted near the centre of the cake comes out clean.
  4. If it sticks, bake another few minutes.

Note:

  1. You can bake it simply into pre heated cooker on minimum flame.
  2. Let it cool for some time and transfer into serving disc.
