Sweet and salted biscuit

This is loved by kids and adults equally; this ‘sweet and salted biscuit’ serve with tea/coffee or with milk for children. This is all time favorite; you can carry easily or pack for travelling too. It is made from wheat flour, white butter, and milk powder.

Ingredients:

  • Wheat flour: 100gm.
  • Maida (all-purpose flour):150 gm.
  • Sugar powder: 50gm.
  • Salt: 1 ½ teaspoon
  • White butter/butter: 150 gm.
  • Milk powder: 30 gm.
  • Baking powder: ¼ teaspoon
  • Milk: 2 tablespoon

Preparation:

  1. Sieve Maida, wheat flour, salt, milk powder and baking powder together. (3-4 times)

Method:

  1. Take a big mixing bowl, add butter, sugar powder and mix it well with the help of hand blender/food processor or using your palm. Add Maida mixture and milk; kneed them well to make soft dough.
  2. Now biscuit dough is ready, Divide dough into 3-4 parts and make balls.
  3. Roll the ball in ¼ inch thick; cut biscuits with fancy heart shape biscuit cutter arrange raw biscuit on greased tray and bake in the oven at 160 degree centigrade for 5-6 minutes.
  4. Allow it to cool.
  5. Now, Sweet and salted biscuit is ready to use.
  6. Biscuit can be stored in air tight container for week or two.

Mango Sooji/rava cake (eggless)

Cake culture started in our society to celebrate the birthday. Today is the birthday of my elder daughter-in-law to wish her happy and prosperous year ahead, I would like to highlight this occasion to upload a mango Sooji cake recipe for our viewers.

Nothing is better than homemade mango Sooji cake, Taste of this homemade mango Sooji cake is really superior and worth putting efforts.

Ingredients:

  • Sooji/rava: 1 ½ cup
  • Maida:  ½ cup
  • Mango: 2 no. (250-300gm.)
  • Baking soda: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 1 pinch
  • Refined oil/ghee (clarified butter): ¾ cup
  • Mango: 3 no. (450 gm)
  • Mango essence: 1 teaspoon (optional)
  • Sugar: ¾ -1 cup (as per mango sweetness)

Preparation:

  1. Peel off mangoes, cut into pieces, discard seeds, and put the pulp in to blending jar, blend it till fine paste. Keep aside.
  2. Sieve Maida and baking soda, baking powder and salt together (sieve 3-4 times). Keep aside.
  3. Grind sugar and make powder. Keep aside.
  4. Take a baking tray, put half teaspoon of ghee, and apply ghee all around the container.
  5. Sprinkle one teaspoon of Maida over it. Discard extra Maida. Keep aside.
  6. Take a big mixing bowl, put Sooji and mango pulp, and Mix it well with the help of spoon, keep aside for at least 2 hours or you can store it into refrigerator for overnight.
  7. Take a big mixing bowl, put sugar and mango pulp with sooji, and Mix it well with the help of hand blender/food processor. (About 4-5 minutes). Add sieved mixture of Maida, baking soda, baking powder and salt.
  8. Mix well Make a smooth batter, Add Refined oil/ghee (clarified butter) and mix well, now cake batter is ready.

Method:

  1. Choose the size of baking tray such that when batter is put into it, it gets half filled only, as after baking its volume gets nearly doubled.
  2. Now bake it into pre heated OTG at 160 degree centigrade for about 35-40 minutes, Bake until toothpick inserted near the centre of the cake comes out clean, if it sticks, bake further few minutes.
  3. Let it cool; cut the cake into pieces after cooling, Yum-yum-yummy mango Sooji cake is ready to serve.

Note:

  1. You can bake it simply into pre heated cooker on minimum flame.
  2. Let it cool for some time and transfer into serving plate.

Eggless Date Cake

Ingredients:

  • Maida: 2 cups
  • Baking soda: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 1 pinch
  • Refined oil/ghee: ¾ cup
  • Date: 22-25no.
  • Sugar: ¾
  • Ghee: 1 teaspoon
  • Milk: 1 cup

Preparation:

  1. Discard the seed of date; grind the date coarsely along with ¾ cup of milk. Keep aside.
  2. Sieve Maida and baking soda, baking powder and salt together (sieve 3-4 times). keep aside.
  3. Grind sugar and make powder. Keep aside.
  4. Take a baking tray, put half teaspoon of ghee, and apply ghee all around the container.
  5. Sprinkle one teaspoon of Maida over it. Discard extra Maida. Keep aside.
  6. Take a big mixing bowl, put sugar and date paste.

Melon seed biscuit/cookie

Ingredients:

  •  Maida (all-purpose flour):1 cup
  • Ghee: half cup
  • Sugar: half cup (powder)
  • Baking powder: half teaspoon
  • Melon seed: half cup
  • Green cardamom: 6-8 no.

Preparation:

  1. Sieve Maida and baking powder together. (3-4 times)
  2. Discard cardamom skin and grind with the sugar, till get fine powder. Keep aside.

Method:

  • Take a big mixing bowl, put sugar and ghee in it.
  • Mix it well with the help of hand blender/food processor or hand. (About 4-5 minutes).
  • Add Maida along with baking powder and melon seed.
  • Mix well, kneed them well to make dough like chapati dough.
  • Now biscuit dough is ready, Divide dough into 2 parts and make balls.
  • Roll the ball in1/4 inch thick; cut it longitudinally with the help of knife. As shown in photo.
  • Now raw biscuit is ready to bake into oven.
  • Preheat oven at 200 degree centigrade.
  • Place the raw biscuit in the baking tray like photo.
  • Bake the biscuit for 7-8 minutes. Allow it to cool.
  • Now, Melon seed biscuits ready to serve.
