Arabi Took/Taro Root Dry (Colocasia Dry)

‘Took’ is a favorite and classic Sindhi recipe; double fried and smashed; loved by kids to elders. Generally it is served as starter, tea-time snacks or side dish along with any meal like steamed rice and dal/kadhi.

This vegetable(Arabi/Taro root) has neutral taste and slimy-texture. It is high in fiber and low in calories; contains vitamin ‘C’ & ‘B’. It has more potassium than potatoes.

Ingredients:

  • Arabi: 200 gm
  • Salt: ¼ teaspoon
  • Turmeric powder: ¼ teaspoon
  • Mustard Oil/cooking oil of your choice: for deep frying
  • Chili flex: ½ teaspoon
  • Coriander powder: ¼ teaspoon
  • Chat masala: ½ teaspoon
  • Kala namak (black rock salt): ½ teaspoon

Preparation:

  1. Prepare spice mix to mix all powder masala, keep aside.
  2. Peel off arabi, keeps aside.

Method:

  1. Deep fry arabi on medium flame until gets golden in color (about 5-6 minutes). Take it out from oil, when it is warm; by using frying spatula or bowl slightly press the fried arabi.
  2. Refry them until golden brown in color and crispy coating all around (about 3-4 minutes); dry out on the kitchen towel.
  3. Sprinkle prepared spice mix over the fried ararbi; mix well so that spices coat all around, now ‘Arabi Took/Taro Root Dry (Colocasia Dry)’ is ready to be served.

Sindhi style fish fry masala

This is one of the classiest Indian variations in cooking Indian style fish. Sindhi fish masala fry is the fried version and is completely a Devourer’s delight for her tongue. It is spicy, tangy and a melting pot of deliciousness and contentment..

Ingredients:

  • Rohu fish: 250 gm
  • Onion: 2 no. (Medium)
  • Tomato: 1 no. (Medium)
  • Lemon juice: 1 tablespoon
  • Ginger: 2” piece
  • Green chili: 2 no.
  • Garlic paste: half teaspoon
  • Oil: 4 table spoon
  • Cumin seed: half teaspoon
  • Salt: one and half teaspoon
  • Turmeric powder: 1 teaspoon
  • Red chili powder: 1 teaspoon
  • Coriander powder: 1 teaspoon
  • Garam masala powder: half teaspoon
  • Fresh coriander leaves: 2 table spoon (chopped)

Preparation:

  1. Clean the fish properly with running water. Add lemon juice. Wait for 5-7 minutes. Again wash the fish drain out all the water.
  2. Add garlic paste, salt and turmeric powder. Rub all these items on the fish. Keep aside.
  3. Cut onion, green chilies and tomatoes into small pieces.

Method:

  1. Heat 2 tablespoon oil in fry pan on high flame, when smoke starts coming, reduce heat at low flame. Add fish pieces and increase the flame to high.  Fry on both sides till light golden color appears (about 2-3 minutes each side). Keep aside.
  2. Add remaining oil in a pan till smoke is coming.
  3. Put cumin seed sputter for few seconds; add chopped onion stir fry on high flame till onion gets translucent. (About 3-5 minutes)
  4. Add tomato, fry for 2 minutes.
  5. Add ginger and green chili, and fry until golden brown (about 3 minutes).
  6. Add chili, coriander, turmeric and Garam masala powder, and cook till oil starts leaving the edges.
  7. Add fried fish, cook for 4-6 minutes with lid on. Reduce to low flame.
  8. Cook until nice aroma and oil comes on top.
  9. Transfer into serving plate, decorate with chopped coriander leaves.
  10. Serve as main meal with paratha or rice.
