Chana dal with Paneer (Split Bengal gram with fresh cheese)

The most awaited day of the week arrived, as always we had planned to have get-together with my extended family on lunch. I was sipping my morning tea and turned over the pages of magazine I read somewhere that the latest version of oxford dictionary included the two Indian words chana and chana dal. At that very moment I planned to prepare the recipe of ‘Chana dal with paneer’.

It is very interesting recipe; you can make easily in no time, above all it is the power house of protein.

Ingredients:

  • Chana dal: 200gm
  • Paneer: 250-300 gm.
  • Turmeric powder: ½ teaspoon
  • Cumin: half teaspoon
  • Cinnamon: 2” stick
  •  Black cardamom: 2 no.
  • Green cardamom: 1 no.
  • Clove: 3-4 no.
  • Black pepper: 10-12 no.
  • Dry red chilly: 2- 3 no.
  • Bay leaf: 2 no.
  • Ginger: 2 inch piece
  • Garam masala powder: half teaspoon
  • Garlic: 2-3 cloves
  • Salt: 2 teaspoon (as per taste).
  • Onion: 1 no. (Small)
  • Tomato: 2-3 no. (Small)
  • Ghee: 3 tablespoon
  • Water: 500 ml

Seasoning:

  1. Ghee:  1 tablespoon
  2. Cumin: ½ teaspoon
  3. Chili powder: 1 teaspoon

Preparation:

  1. Soak dal for 2 hours, keep aside.
  2.  Finely chop onion, tomato, ginger and garlic, keep aside.
  3. Cut paneer into cubes and fry, keep aside.

Method:

  1. Put ghee in pressure cooker; add chili, whole Garam masala and bay leaf fry for few seconds, add chopped ginger, garlic and onion, fry till light brown in color (3-4 minutes).
  2. Add chopped tomatoes; keep frying till ghee separates from side, add soaked dal, turmeric powder and salt.
  3. Fry for about 3-4 minutes, pour water; close the lid, place cooker on maximum heat, bring to full cooking pressure, reduce to low flame and cook for 7-8 minutes. Put off the flame.
  4. Allow cooker to cool and open; add fried paneer and cup of water (if required) put on the flame, when dal is just boiling, put off the flame.
  5. Add Garam masala powder, transfer into serving bowl; add tadaka (seasoning) before serving.

Tadaka (seasoning):

  1. Take fry pan, put ghee; add cumin, when it crackle put off the flame.
  2. Add chili powder and pour over the dal, and cover the lid.

Rice paper rolls with mix vegetable

  • Servings: 3-4
  • Stuffing frying time: 12 minutes.
  • Preparation time(Roll): 2 minutes(each).
  • Frying time: 3 minutes.
  • Total time: 60 minutes.

The rice paper roll/wrap is ideal for starter or afternoon tea, when you feel slightly hungry; you may deep fry, grill or serve directly as you like.

You might have had this type of rolls as starters in the restaurants, but this is something different. Here I used exotic vegetables and Japanese rice; the recipe will surly satisfy you, your family and friends.

Ingredients:

  • Rice paper: 6-8 no. (Available in departmental store)
  • Cooked Japanese rice: 1 cup
  • Mushroom (chopped): 2 tablespoon
  • Paneer (cottage cheese): 50 gm
  • Carrot (chopped): 2 tablespoon
  • Peas fresh/frozen: 2 tablespoon
  • Onion (chopped): 1 tablespoon
  • Spring onion (chopped): 2-3 tablespoon
  • Corn fresh/frozen: 2 table spoon
  • Broccoli (chopped): 2 tablespoon
  • Ginger (chopped): 1 teaspoon
  • Tomato (chopped): 1 no. (Medium)
  • Olive oil/Cooking oil: 2 tablespoon
  • Salt: 1 teaspoon (as per taste)
  • Turmeric power: ½ teaspoon
  • Chili powder: ½ teaspoon
  • Coriander powder: ½ teaspoon
  • Garam masala powder: ½ teaspoon
  • Cumin: ¼ teaspoon
  • Olive oil/ cooking oil: 2 tablespoon
  • Olive oil/ cooking oil: for deep frying

Preparation:

  1. Take fry pan, put oil to heat add cumin; let it sputter for few seconds add ginger and carrot stir-fry for a minute on high flame. Add mushroom and broccoli, stir-fry for one minutes on high flame.
  2. Add onion and spring onion, continue to stir-fry for one minutes on high flame, add peas and corn, and stir-fry for couple of minutes on high flame.
  3. Add tomato, salt, turmeric powder, coriander powder and chili powder continue to fry for about couple of minutes; add paneer and cooked rice, cook for a minute, Put off the flame.
  4. The stuffing is ready after adding Garam masala powder, keep aside.

Method:

  1. Keep ready a bowl filled with water, slide one rice paper into the filled water bowl for about 30 seconds: take out and place and spread on the chopping board/plate. Put two tablespoon of stuffing on it and fold it from lower side of the rice paper carefully as shown in the photo then fold from both left and right side as shown in the photo and further fold it as shown in photo.
  2. Now the roll is ready to deep fry, grill or serve directly, keep aside.

Frying/grilling

  1. Take wok/fry pan heat oil in it, let oil to smoke. Put prepared roll into the oil and deep fry on medium high flame or until golden color(about 2-3 minutes). Yummy ‘Rice paper rolls with mix vegetable’ is ready.
  2. You may grill the prepared roll or may serve just as it is.
  3.  Serve with dip or ketchup.

Note:

  1. You may use your choice of vegetables.
  2. You may prepare in advance, wrap the roll in cooking sheet and keep it in refrigerator.

Paneer (cottage cheese) ka kheer

Our food today getting internationalized; I would like to revive India’s traditional culture of eating home cooked food, the “Paneer ka kheer” mostly prepared in Bengali houses, but now you can share this in your kitty party and your party will become special…

It can also be prepared on the occasion of Navratri or Durga pooja or any festival as a phalahari recipe.

Its taste is really-really extraordinary and can be prepared quickly if you have ready paneer in your hand.

Ingredients:

  • Paneer: 200 gm
  • Milk: 1 liter
  • Sugar: 50 gm
  • Green cardamom powder: 1 teaspoon
  • Pistachio: 12-15 no.
  • Cashew nut: 12-15 no.
  • Saffron: 1 pinch

Preparation:

  1. Crumble paneer and keep aside.
  2. Chop pistachio and cashew nut, Keep aside.

Method:

  1. Take a wide mouth heavy bottom pan; apply some ghee (clarified butter) at the base and inner wall of the pan, pour the milk into the pan and allow it to boil on high flame, keep stirring and scraping the sides of the vessels at regular interval after 10-12 minutes it reduces to half of volume, don’t forget to scrap and stir continuously.
  2. Add saffron and sugar; reduce the flame, when milk starts getting thick consistency (see photo), within couple of minutes add cashew nut.
  3. Add crumbled paneer and allow it to boil on high flame, keep stirring, when it will become thick, add cardamom powder, now put off the flame, and allow it to cool.
  4. Serve hot in serving bowl. Decorate with Pistachio. Keep it into refrigerator for an hour or two.
  5. Now, Paneer (cottage cheese) ka kheer is ready to serve.

Lauki-paneer (bottle gourd-cottage cheese) butter masala

  • Servings: 4

I prepare this dish for daily intake; it takes very less time to prepare. We love simple and home cooked food, which brings happiness. The aroma and taste of this ‘butter masala lauki paneer’ is awesome. Sure, you will love it.

Lauki is popular throughout the world for its health benefits, a vegetable with high water content and rich source of vitamin C, K and calcium also good to fight heat of summer. … As we know paneer is rich source of protein. The combination of lauki paneer dish is like ‘sone pe suhaga’.

Ingredients:

  • Lauki (bottle gourd): 300 gm
  • Paneer (cottage cheese): 150 gm.
  • Onion: 1 no.
  • Tomato: 2 no.
  • Green chili: 2 no.
  • Turmeric powder: ½ teaspoon
  • Salt: 1 teaspoon
  • Sugar: ½ teaspoon
  • Butter: 2 tablespoon
  • Whole Garam masala: (Clove: 2 no. Green cardamom: 1 no. Black pepper: 10-12 no. Cumin: ½ teaspoon Cinnamon: 2” stick)
  • Whey (left over water of paneer): 1 cup

Note: if whey is not available you can use normal water.

Preparation:

  1. Remove the Peel of bottle gourd and chop them into square, microwave/boil them and keep aside.
  2. Chop onion, tomato and chili roughly, microwave/boil and grind them to smooth paste. Keep aside.

Method:

  1. Take a non stick pan, put 1 tablespoon of butter; add whole Garam masala, sputter it for few seconds, add ground paste of onion, tomato and chili,  stir fry on medium flame for about 2-3 minutes or till liquid dries up and butter separates from sides, add remaining butter, salt, sugar and turmeric powder, stir fry for couple of minutes.
  2. Add boiled lauki and paneer stir fry on medium flame for couple of minutes, add whey (as per your requirement) put the lid on and cook on medium flame. Cook for 2- 3 minutes.
  3. Put off the flame, transfer into serving bowl and decorate with butter.
  4. Lauki (bottle gourd) paneer (cottage cheese) butter masala is ready to be served.
  5. Serve hot or warm with paratha/chapati.

Ingredients:

  • Paneer (cottage cheese):250 gm
  • Onion: 400 gm.
  • Tomato: 100 gm
  • Garlic: 1 pod
  • Ginger: 3’ piece
  • Kasuri methi: 2 teaspoon
  • Chili powder: 1 teaspoon
  • Turmeric powder: half teaspoon
  • Coriander powder: 1 teaspoon
  • Garam masala powder:  half teaspoon
  • Cumin: 1 teaspoon
  • Mustard Oil/any cooking oil: 4 tablespoon
  • Salt: one and half teaspoon (as per taste)

Preparation:

  1. Cut the paneer into big chunks, keep aside.
  2. Chop 1 onion into slices longitudinally and 1 onion into 8 pieces, then separate their leaves as shown in photo.
  3. Chop garlic, ginger green chili and tomato longitudinally, keep aside.

Method:

  1. Heat 2 tablespoon of oil in a fry pan, add separated leaves of onion saute on high flame for couple of minutes, and add green chili stir fry for twenty seconds, take it out and keep side.
  2. Heat remaining oil in a fry pan, add sliced onion saute on high flame for couple of minutes, and add chopped garlic and ginger stir fry.
  3. Add chopped tomato, chili powder, coriander powder, turmeric powder and salt continue to fry for couple of minutes or until liquid dries up; crushed kasuri methy with your both palm and add; stir fry for couple of minutes, add ¼ cup of water so that all ingredients get mixed homogeneously, cook for couple of minutes to get messy appearance.
  4. Now add paneer; stir fry for couple of minutes; add fried leaf of onion and green chili; cook for couple of minutes on medium flame, add Garam masala powder ‘Paneer (cottage cheese) do pyaza’ is ready to be served.
  5. Transfer into serving bowl and decorate with green coriander leaves. Serve with roti, paratha or as a side dish.
