Ingredients:

  • Carrot: 100 gm.
  • Tomato: 300 gm.
  • Split Mung dal: 50 gm.
  • Onion: 1 no. (Small size)
  • Garlic shoot: 2-3 no. (if available)
  • Ginger: 2” piece
  • Garlic: 2-3 flakes
  • Bay leaf: 1 no.
  • Clove: 2 no.
  • Water: 4 cups
  • Salt: ½  teaspoon
  • Black rock salt (Kala namak): ½ teaspoon
  • Black pepper powder: ½ teaspoon
  • Butter: 2 tablespoon (as per taste)
  • Ghee: 1 teaspoon
  • Cumin: 1 teaspoon

Preparation:

  1. Roughly chop carrot and tomatoes keep aside.
  2. Peel off and slice onion, garlic shoot, garlic and ginger. Keep aside.

Method:

  1. Take a pressure cooker; put butter, clove and bay leaf, sputter for few seconds. Add ginger, garlic, garlic shoot and onion, stir fry for couple of minutes on medium flame; add carrot continue to fry for couple of minutes. Add tomato, split Mung dal and salt; continue to fry until tomatoes get messy appearance, add water.
  2. Place cooker on maximum heat, bring it to full cooking pressure; put off the flame, let it cool, remove bay leaf and make puree in a blender, pass this through soup sieve. Discard the residue. Add desire quantity of water if needed. Reheat soup; add kala namak and fresh ground black pepper.

Seasoning:

  1. Take a small fry pan; add cumin, sputter for few seconds, pour onto soup; now it is ready to be served. Serve hot, You can add extra butter too.

Raw Jack Fruit Soup (kathal soup)

Jack fruit comes in the categories of super food; can be eaten raw or ripen. It is commonly used in south and south Asian countries. It is national fruit of Bangladesh and Sri Lanka and the state fruit of Indian state of Kerala and Tamil Nadu. It is available worldwide, if not fresh then canned or frozen.

Raw jack fruit soup is one of the useful options to reduce your weight, super healthy soups, full of nutrients and a lot of dietary fiber; you will love this colorful and flavorful soup, the color comes from the use of turmeric.

Ingredients:

  • Raw jack fruit: 100-150 gm. (peeled, chopped, boiled and mashed)
  • Onion: 1 no. (Small size)
  • Ginger: 2” piece
  • Green chili: 1 no.
  • Tomato: 1no. (Medium size)
  • Water: 4 cup
  • Salt: 1 teaspoon
  • Turmeric powder: ¼ teaspoon
  • Black rock salt (Kala namak): 2 pinch
  • Cumin: 1 teaspoon
  • Ajwain: ½ teaspoon
  • Black pepper powder: ½ teaspoon
  • Butter: 2 tablespoon (as per taste)
  • Lemon: ½ no. (Optional)

Preparation:

  1. Peel off and slice onion, Tomato, green chili and ginger. Keep aside.

Method:

  1. Take a wok and put butter, ajwain and cumin, sputter for few seconds, add ginger and green chili, stir fry for a minute, add onion continue to fry on medium flame till onion gets translucent.
  2. Add chopped tomato; continue to fry for a minute, add salt and turmeric powder stir fry and add boiled and mashed jack fruits, stir fry for couple of minutes.
  3. Add water; bring it to boil, continue to cook for 5-7 minutes on low flame. Put off the flame when desired consistency of soup achieved.
  4. Add fresh ground black pepper and serve the piping hot ‘Raw Jack Fruit Soup (kathal soup)’.

Palak tomato and chana dal soup

Eating the right type of food is the key for healthy, beautiful and youthful living and it ensures you for quality life too.  To prepare ‘Palak tomato and chana dal soup’ is very quick and simple. It is delicious and healthy too. It is light on the stomach and rich in protein & vitamins.

Here I used micro wave to boil the ingredients and used dal which is soaked for ½ an hour. You may use pressure cooker then there is no need to soak the dal.

Ingredients:

  • Spinach: 200 gm
  • Chana dal (split Bengal gram): 2 tablespoon
  • Onion: 1 no. (Medium size)
  • Tomato: 2-3 no. (Medium size)
  • Ginger: 2” piece
  • Water: 5 cup
  • Butter: 50gm.
  • Salt: ½ teaspoon
  • White rock salt: ½ teaspoon
  • Black rock salt (Kala namak): 2 pinch
  • Black pepper powder: ½ teaspoon

Preparation:

  1. Clean and chop spinach, onion, tomatoes and ginger into small pieces.
  2. Clean and wash chana dal, keep aside.

Method:

  1. Put all ingredients, except butter and kala namak in pressure cooker; Place cooker on maximum heat, bring it to full cooking pressure, reduce to lower heat and cook for 2-3 minutes. Allow cooker to cool.
  2. Here I used micro wave to boil the ingredients and used soaked dal (soaked for ½ an hour).
  3. After cooling, roughly grind it in mixer grinder for few seconds, Pass this through soup sieve. Discard the residue. Reheat soup; add kala namak and fresh ground black pepper. Serve with bread croutons.

Jhatpat tomato soup

Soup is a great comfort food, and one of the simplest recipe and healthy too.

This soup recipe which I am going to share with you is light and perfectly balanced, add some noodles or magi masala noodles as per your choice, serve hot and enjoy the delicious bowl of goodness.

I hope that you feel warmth and happiness after taking this noodles soup filled with the texture rich in onion.

Ingredients:

  • Tomato: 2 no. (Medium)
  • Onion: ½
  • Ginger: ½” piece
  • Salt: ½ teaspoon (as per taste)
  • Ghee/olive oil: 1 tablespoon
  • Butter: 1 tablespoon (optional)
  • Black pepper powder: ¼ teaspoon.
  • Water: 3 cups

Preparation:

  1. Grind tomato and ginger, make paste. Keep aside.
  2. Chop onion in small pieces. Keep aside.

Method:

  1. Heat ghee in fry pan on medium flame, add chopped onion; fry till onion gets opaque (about for a minute or two).
  2. Add ground paste and fry it on medium flame, when it changes color (about 2 minutes), add water slowly (stir to mix well, so that lumps formation is avoided).
  3. Add salt, boil it and add noodles and continue to boil on medium low flame till noodles is done. Add black pepper/seasoning, put off the flame, and add butter.
  4. Transfer into soup bowl; serve with extra butter and black pepper powder.

Lauki (bottle gourd) soup

Lauki soup is a comforting bowl of healthy, nutritious and delicious soup; which is full of goodness; whenever you need light very light meal or when you are on dieting it is the right food to have.

It is easy to prepare; just takes 15 minutes; serve with readymade toast or toasted bread slices.

Ingredients:

  • Lauki (bottle gourd): 350-400 gm.
  • Onion: 1 no. (Medium size)
  • Tomato: 2-3 no. (Medium size)
  • Ginger: 2” piece
  • Water: 5 cup
  • Salt: ½ teaspoon
  • White rock salt: ½ teaspoon
  • Black rock salt (Kala namak): 2 pinch
  • Black pepper powder: ½ teaspoon
  • Ajawine (carom seed): ¼ teaspoon

Seasoning:

  1. Butter: 1 tablespoon (as per taste)
  2. Cumin: ¼ teaspoon
  3. Lauki (bottle gourd): 50 gm.

Preparation:

  1. Peel and roughly chop ¾ parts of lauki, onion and tomato. Keep aside.
  2. Chop ¼ of lauki into small pieces. Keep aside.

Method:

  1. Put roughly chopped lauki, tomatoes, ginger, onion, white rock salt, salt in pressure cooker; place cooker on maximum heat, bring it to full cooking pressure, reduce to lower flame and cook for 2-3 minutes. Allow cooker to cool.
  2. After cooling roughly grind it in mixer grinder for few seconds, pass this through soup sieve. Discard the residue.
  3. Reheat soup; add some water if required to get the desire consistency of the soup.

Seasoning:

  1. Take a small fry pan; put butter and cumin, sputter for few seconds, add small chopped pieces of lauki, stir fry on medium flame till it is done; add kala namak and fresh ground black pepper.
  2. Spread this fried lauki over prepared soup. ‘Lauki (bottle gourd) soup’ is ready to serve. Serve hot.
