Makhana (fox nut) ka raita

It has unimaginable health benefits, curd is rich in calcium, protein and above all it is the integral part of Indian meal.

Ingredients:

  • Makhana (fox nut): 50 gm
  • Curd (Yogurt): 200-250 gm
  • Milk: 100ml.
  • Cumin seed (roasted powder): 1 teaspoon
  • Chili powder: ½ teaspoon
  • Kala namak: ½ teaspoon
  • Green chili: 1 no (optional)
  • Mint leaves: 10-12 leaves
  • Salt: half teaspoon
  • Sugar: 1 teaspoon (optional)
  • Dry grapes: 20-30 gm

Preparation:

  1. Cut makhane into 2-3 pieces, keep aside.
  2. Chop green chili and mint leaves, keep aside.
  3. Dry roast makhana on low flame till gets crisp, put into the milk for soaking for half an hour or keep in refrigerator.

Method:

  1. Blend the curd on high speed, pour this blended curd into mixing bowl; add salt, Chili powder, Kala namak, Green chili, Mint leaves , Sugar, Dry grapes and cumin seed powder into the bowl, mix them well. Add soaked makane into the curd mixture, Mix well and put into serving bowl. Decorate with mint leaves and dry grapes. Makhana (fox nut) ka raita is ready.

Boondi raita

Raita is one of the most popular dishes from Indian cuisine. This is easy to prepare can be made in quick time, goes well with poori, pulao, biryani, paratha.

Including this raita in your meal will make the meal more enjoyable. Above all this preparation is full of calcium and protein.

Ingredients:

  • Boondi: ½ cup
  • Curd (Yogurt): 1 cup
  • Cumin seed (roasted powder): 1 teaspoon
  • Salt: half teaspoon
  • Sugar: ½ teaspoon (optional)
  • Chili powder: ½ teaspoon
  • Fresh mint leaves: 1 teaspoon
  • Green chili: 1 no.(optional)

Preparation:

  1. Soak the boondi into hot water for couple of minutes, discard the water. Keep aside.
  2. Chop mint leaves and green chili keep aside.

Method:

  1. Take a mixing bowl.
  2. Put the curd, salt, cumin seed powder, chili powder, green chili and chopped mint leaves into the bowl.
  3. Mix them well.
  4. Add soaked boondi into the curd, mix well and put into serving bowl.
  5. Boondi raita is ready. Sprinkle the little cumin powder and chili powder over the prepared raita.
  6. You can serve this as a side dish too.

Aloe Vera (Ghritkumari) raita

According to yoga guru Ramdeo baba, if you want to lead a healthy life, you must do yoga and consume aloe Vera juice. Now all worlds know about the significance of yoga and the wonder food aloe Vera. Here is a way to consume aloe Vera in the form of ‘Aloe Vera raita’ eat and enjoy.

Aloe Vera has the properties to Reduces Cholesterol, Regulates Blood Sugar, triglycerides for a healthy heart. It reduces constipation; it’s very good for right bowl movement too.

Aloe Vera contains protein, calcium, magnesium, zink, vitamin A& E and is naturally rich in vitamin C.

Ingredients:

  • Aloe Vera: 1 leaf
  • Curd (Yogurt): 1 cup
  • Ginger: 1” piece
  • Cumin seed (roasted powder): ½ teaspoon
  • Salt: half teaspoon
  • Kala namak: ¼ teaspoon
  • Chili powder: ¼ teaspoon (optional)
  • Sugar: 1 teaspoon (optional)
  • Pomegranate: 2 tablespoon
  • Green coriander: 1 tablespoon
  • Walnut: 4-5 no.

Preparation:

  1. Method to separate Aloe Vera pulp and cut in to small pieces:
  2. Cut Aloe Vera leaf into 4-5 inch long pieces.
  3. Leave it for 5- 10minutes, the bitter yellow liquid will come out at the end.
  4. Discard thin layer from both end having yellow liquid.
  5. Cut longitudinally into 2-3 pieces. See photos given here.
  6. Peel off skin the aloe Vera as shown in photo. Aloe Vera pulp is ready.
  7. Cut aloe Vera pulp in small pieces. Keep aside.
  8. Cut ginger and walnut too. Keep aside.

Method:

  1. Take a mixing bowl; Put the curd, salt, cumin seed powder and sugar into the bowl.
  2. Mix them well, Add aloe Vera pieces, walnut, pomegranate and ginger, mix well and put into serving bowl.
  3. Now aloe Vera raita is ready to be served, this is the complete breakfast in the morning after yoga/exercise.
  4. You can serve this as side dish too.

August flower raita /pachdi (from south India)

August flower has bunch of healthy value, it cures night blindness as it contain vitamin ‘A’, it strengthens optical nerves, it has power to throwing out stomach worms and makes your stomach happy for long time. It is better to choose flowers that have not bloomed fully, however bloomed one is also very good.

In our country, where language, attire, music tradition and life style change in every 100km. making raita is also different from north India to south India. The august flower raita, which I am going to upload today, is south Indian in preparation style, called pachdi. It is Simple, tasty and delicious.

Ingredients:

  • August flower: 100 gm.
  • Curd: 1 cup
  • Salt: half teaspoon
  • Mustard seed: 1/4 teaspoon
  • Split black gram: 1 teaspoon
  •  Curry leaves: 8-10no.
  • Asafoetida: 1 pinch
  •  Oil: 1 teaspoon
  • Red chili: 1-2 no.
  • Cumin seed powder: ½ teaspoon
  • Fresh scrapped coconut: 2 table spoon (optional)

Preparation:

  1. Take flower; discard stigma (centre hard stem), chop roughly and keep aside.
  2. Boil August flower till it become soft.
  3. Squeeze out extra water, keep aside.
  4. Scrapped coconut (coarse paste), keep aside.

Method:

  1. Take a mixing bowl. Put the curd, salt, boiled August flower in it.
  2. Mix them well, and pour the seasoning on it.

Seasoning:

  1. Take a small fry pan, put oil and heat on high flame, when smoke begins to come, add mustard seed, whole red chili, split black gram.
  2.  Sputter it for few seconds, add scrapped coconut, stir fry for few seconds and put off the flame. Add asafetida.
  3. Spread this seasoning all over the raita.
  4. August flower raita (pachdi) is ready to serve.
  5. Mix well and put into serving bowl.
  6. You can serve this with paratha or any meal,

  • Potato: 2 no. (Medium size)
  • Curd (Yogurt): 1cup
  • Cumin seed (roasted powder): 1teaspoon
  • Salt: half teaspoon
  • Sugar: ½ teaspoon (optional)
  • Chili powder: ½ teaspoon
  • Fresh coriander leaves: 1 teaspoon

Preparation:

  1. Boil the potatoes, allow it to cool, peel and chop it into small pieces. Keep aside.
  2. Chop coriander leaves, keep aside.

Method:

  1. Take a mixing bowl.
  2. Put the curd, salt, cumin seed powder, chili powder and chopped coriander leaves into the bowl.
  3. Mix them well.
  4. Add chopped potatoes, Mix well and put into serving bowl.
  5. Now potato raita is ready. Sprinkle the little cumin powder and chili powder over the prepared raita.
  6. You can serve this as side dish too.
