Sweet potato mash with milk

Boil/microwave the sweet potatoes, mash and add warm milk till it achieves slightly thick consistency not watery. Add sugar/ honey as per your choice.

Ingredients:

  • Sweet Potato (shakarkandi/satsumaimo): 2-3 no. (Small size)
  • Honey/sugar: 2 tablespoon (as per taste)
  • Butter: 1 teaspoon
  • Ghee/oil: to moisturize outer layer
  • Milk: 1 cup
  • Saffron: ½ pinch
  • Green cardamom: 2-3 no.
  • Dry fruits (almond & cashew nut):10-12 no. (As per choice)

Preparation:

Wash and dry the sweet potato with kitchen towel, apply little quantity of ghee on the skin; Boil/microwave/roast the sweet potato, remove skin (outer layer) Keep aside. Here I used Japanese griller and roasted, which is very convenient.

Method:

  1. Take a mixing bowl put all sweet potatoes, Add sugar/ honey as per your choice into this bowl, and mash with the help of masher or hand.
  2. Mash properly more you mash better will be the taste. Add warm milk in steps to make smooth paste of slightly thick consistency not watery. Add other ingredients and mix.
  3. Sweet potato mash with milk is ready to serve or to feed your baby. You are free to decorate with dry fruits if not serving to baby.

Sweet potato mash with honey and butter

It was balmy winter evening when I was passing the street back home from station in Tokyo; highly pleasing delectable flavor of baking aroma was coming from a stall. When reached near the stall, I found that sweet potatoes were being baked. Japanese love to eat the sweet potatoes in both ways; savory and sweet. In Japan sweet potato is available almost whole year. Most of the Japanese sweet potatoes variety is sweeter than Indian counterpart.

I love to eat sweet potato and my husband like to eat the recipe that I am uploading today. The recipe “Sweet potato mash with honey and butter” is healthy and highly nutritious for toddlers/baby. They will certainly like the taste and smooth finish of this sweet potato recipe.

Very easy to prepare; just boil/microwave the sweet potato, peel out the skin, mash it and add some honey and dash of butter. In this recipe I grilled the sweet potatoes.

The benefits of honey, butter and sweet potatoes is good for vision and tonic for brain. Add little butter in the sweet potatoes to increase the absorption of beta carotene in the body.

Jackfruit Sooji cake

Jackfruit has a sweet and strong flavor; the aroma of the cake made from jackfruit is something that lingers for long after tasting this. The homemade cake is always superior and worth the efforts.

Ingredients:

  • Sooji/rava: 150 gm.
  • Maida:  50 gm.
  • Ripe Jack fruit : 150-200 gm (with seed).
  • Baking soda: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 2 pinch
  • Refined oil/ghee (clarified butter): ¾ cup
  • Sugar: ¾ cup

Preparation:

  1. Cut jackfruits, discard seeds, and put the pulp in to blending jar, blend it till fine paste. Keep aside.
  2. Sieve Maida and baking soda, baking powder and salt together (sieve 3-4 times). Keep aside.
  3. Grind sugar and make powder. Keep aside.
  4. Take a baking tray, put half teaspoon of ghee, and apply ghee all around the container, sprinkle one teaspoon of Maida over it. Discard extra Maida. Keep aside.
  5. Take a big mixing bowl, put Sooji and jackfruit pulp, and Mix it well with the help of spoon, keep aside for at least 2 hours or you can store it into refrigerator for overnight.
  6. After two hrs (or overnight in refrigerator), put sugar and mix it well with the help of hand blender/food processor for 4-5 minutes. Add sieved mixture of Maida, baking soda, baking powder and salt.
  7. Mix well Make a smooth batter, Add Refined oil/ghee (clarified butter) and mix well, now cake batter is ready.

Method:

  1. Choose the size of baking tray such that when batter is put into it, it gets half filled only, as after baking its volume gets nearly doubled.
  2. Now bake it into preheated OTG at 160 degree centigrade for about 35-40 minutes. Check by inserting toothpick near the centre of the cake if it comes out clean otherwise bake further few minutes and check again.
  3. Let it cool; cut the cake into pieces after cooling, ‘jackfruit Sooji cake’ is ready to serve.

Note:

  1. you can bake it simply into pre heated cooker on minimum flame.
  2. Let it cool for some time and transfer into serving plate.

Sweet and salted biscuit

This is loved by kids and adults equally; this ‘sweet and salted biscuit’ serve with tea/coffee or with milk for children. This is all time favorite; you can carry easily or pack for travelling too. It is made from wheat flour, white butter, and milk powder.

Ingredients:

  • Wheat flour: 100gm.
  • Maida (all-purpose flour):150 gm.
  • Sugar powder: 50gm.
  • Salt: 1 ½ teaspoon
  • White butter/butter: 150 gm.
  • Milk powder: 30 gm.
  • Baking powder: ¼ teaspoon
  • Milk: 2 tablespoon

Preparation:

  1. Sieve Maida, wheat flour, salt, milk powder and baking powder together. (3-4 times)

Method:

  1. Take a big mixing bowl, add butter, sugar powder and mix it well with the help of hand blender/food processor or using your palm. Add Maida mixture and milk; kneed them well to make soft dough.
  2. Now biscuit dough is ready, Divide dough into 3-4 parts and make balls.
  3. Roll the ball in ¼ inch thick; cut biscuits with fancy heart shape biscuit cutter arrange raw biscuit on greased tray and bake in the oven at 160 degree centigrade for 5-6 minutes.
  4. Allow it to cool.
  5. Now, Sweet and salted biscuit is ready to use.
  6. Biscuit can be stored in air tight container for week or two.

Mahua flower cake (Madhuca longifolia)

Over the years, I found that exploring rather experimenting cooking with ingredients of Indian ethnic flavors provides a greater satisfaction and motivation. Here I experimented with ‘Mahua’. Mahua being naturally sweet and delicious worked beautifully in cake.

Day before yesterday the delicious aroma enveloped not only my kitchen, but entire house.

Today it is marriage anniversary of my younger son. Mahua is fast growing tree, I wish my sweet daughter in law and loving son that their love and happiness grows faster like this tree.

Today I upload the ethnic flavor ‘Mahua cake’

Ingredients:

  • Maida: 200gm.
  • Mahua flower: 50gm.
  • Sugar: 100gm.
  • Refined oil/ghee: 100gm.
  • Ghee: 1 teaspoon
  • Milk: 100 ml.
  • Baking soda: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 1 pinch

Preparation:

  1. Rinse the mahua flower; grind coarsely along with 50 ml of milk. Keep aside.
  2. Sieve Maida and baking soda, baking powder and salt together (sieve 3-4 times) to make it airy. Keep aside.
  3. Grind sugar and make powder. Keep aside.
  4. Take a baking tray, put half teaspoon of ghee, and apply ghee all around the container from inside.
  5. Sprinkle one teaspoon of Maida over it. Discard extra Maida. Keep aside.
  6. Take a big mixing bowl, put sugar and mahua flower paste.
  7. Mix it well with the help of hand blender/food processor. (About 4-5 minutes).
  8. Add sieved mixture of Maida, baking soda, baking powder and salt.
  9. Mix well, add milk and make a smooth batter, add refined oil and mix well, now cake batter is ready.

Method:

  1. Choose the size of baking tray such that when batter is put into it, it gets half filled only, as after baking its volume gets nearly doubled.
  2. Now bake it into preheated OTG at 160 degree centigrade for about 35-40 minutes.
  3. Bake until toothpick inserted near the centre of the cake comes out clean, if it sticks, bake further few minutes. Let it cool.
  4. Yum-yum-yummy cake is ready to serve.

Note:

  1. You can bake it simply into pre heated pressure cooker on minimum flame.
  2. Let it cool for some time and transfer into serving plate.
