Birthday Thali

Next to the birth day of my daughter in law, here comes the birth day of my younger son. It took some time to think, what to make on the occasion of our son’s birthday?

I decided to make birthday Thali, that is favorite Thali of my sons and still they love this Thali on the occasion of their birthday. Today I am going to upload the signature dishes…..of my son’s birthday of their childhood days.

Both my sons are very fond of Gulabjamun laden with Desi ghee; I used to serve on their birthday.

Mango cake (eggless)

Cake is the part of celebration on the birthday occasion; we all enjoy the cutting cake on this occasion. Today let’s indulge into mango cake and enjoy the fresh mango flavor cake on occasion of my daughter-in- law birthday. Nothing is better than homemade mango cake. Taste of this homemade mango cake is really superior and worth putting efforts. Happy birthday my dear daughter! Many -many happy returns of the day! Stay blessed!

Ingredients:

  • Maida: 2 cups
  • Baking soda: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: 1 pinch
  • Refined oil/ghee (clarified butter): ¾ cup
  • Mango: 3 no. (450 gm)
  • Mango essence: 1 teaspoon (optional)
  • Sugar: ¾ cup to one cup (as per mango sweetness)

Preparation:

  1. Peel off mangoes, cut into pieces, discard seeds, and put the pulp in to blending jar, blend it till fine paste. Keep aside.
  2. Sieve Maida, baking soda, baking powder and salt together (sieve 3-4 times). Keep aside.
  3. Grind sugar and make powder. Keep aside.
  4. Take a baking tray, put half teaspoon of ghee, and apply ghee all around the container inner surface.
  5. Sprinkle one teaspoon of Maida over it. Discard extra Maida. Keep aside.
  6. Take a big mixing bowl, put sugar and mango pulp, and Mix it well with the help of hand blender/food processor. (About 4-5 minutes). Add sieved mixture of Maida, baking soda, baking powder and salt.
  7. Mix well Make a smooth batter, Add Refined oil/ghee (clarified butter) and mix well, now cake batter is ready.

Method:

  1. Choose the size of baking tray such that when batter is put into it, it gets half filled only, as after baking its volume gets nearly doubled.
  2. Now bake it into pre heated OTG at 160 degree centigrade for about 35-40 minutes, Bake until toothpick inserted near the centre of the cake comes out clean, if it sticks, bake further few minutes.
  3. Let it cool; cut the cake into pieces after cooling, Yum-yum-yummy mango cake is ready to serve.

Note:

  1. You can bake it simply into pre heated cooker on minimum flame.
  2. Let it cool for some time and transfer into serving disc.

Plain poori/puri

Hot crispy poori! It is really delicious, wonderful and flavorful, and above all it is nutritious too.

Ingredients:

  • Aatta (wheat flour): 1 cup
  • Ajwain: ¼ teaspoon
  • Salt: ¼ teaspoon
  • Maida (refined flour): ¼ cup
  • Ghee/oil: for deep fry

Preparation:

For making dough:

  1. Take a wide vessel; pour Aatta, Maida, Ajwain salt, and one table spoon oil (as moin), knead them to make soft dough.
  2. (The dough can be made in food processor also)
  3. Cover and Keep aside, to be used after 10-20 minutes.

Method:

  1. Divide dough into 12-15 parts and make balls.
  2. Roll the ball in 3-4 inch diameter circle.
  3. Heat oil in a fry pan on maximum flame (to check if oil is ready or not, put a little piece of dough in the oil it should come up slowly.
  4. Deep fry the poori on high flame.
  5. After they start to puff slowly turn over.
  6. Fry till it becomes golden brown.
  7. Now, mouth watering poori is ready to eat with Aamras/ aaloo (potato) govi (cauliflower) sabji along with raita.

Aaloo (potato) raita

Raita is one of the most popular dishes from Indian cuisine. This is very quick and easy to prepare, goes well with poori, pulao, biryani, paratha. Including this raita in your meal will make the meal more enjoyable. Above all this preparation is full of calcium and protein.

Ingredients:

  • Potato: 2 no. (Medium size)
  • Curd (Yogurt): 1cup
  • Cumin seed (roasted powder): 1teaspoon
  • Salt: half teaspoon
  • Sugar: ½ teaspoon (optional)
  • Chili powder: ½ teaspoon
  • Fresh coriander leaves: 1 teaspoon

Preparation:

  1. Boil the potatoes, allow it to cool, peel and chop it into small pieces. Keep aside.
  2. Chop coriander leaves, keep aside.

Method:

  1. Take a mixing bowl.
  2. Put the curd, salt, cumin seed powder, chili powder and chopped coriander leaves into the bowl.
  3. Mix them well.
  4. Add chopped potatoes, Mix well and put into serving bowl.
  5. Now potato raita is ready. Sprinkle the little cumin powder and chili powder over the prepared raita.
  6. You can serve this as side dish too.
