Aam ka panna (raw mango panna/green mango drink)

Enjoy this summer with Aam ka panna; it is a traditional Indian green /raw mango drink, which is the drink, fights against the Indian summer.

It is rich in vitamin ‘C’ and Jaggery gives iron. It is also a good source of vitamin B1 and B2, niacin.

In India, it is regarded as a tonic believed to increase resistance against heat stroke (loo).

Ingredients:

  • Raw mango (kairee):2 no. (Medium size)
  • Mint leaf: 20 gm.
  • Sugar/Jaggery: ½ cup (as per taste)
  • Salt: 1 teaspoon
  • Kala namak (black salt): ½ teaspoon
  • Roasted cumin powder: 1 teaspoon

Preparation:

  1. Boil mango, Let it cool. Peel comes up easily, scrap the pulp from the peel and mango and take out all pulp with spoon keep aside and discard the peel and seed. (You may roast the mango directly on the fire on medium low flame).
  2. Blend the pulp along with sugar and salt, store this into glass bottle and store for a week into refrigerator.

Method:

  1. Add 3cups of chilled water and blend it, add the cumin powder, Pour into tall glasses with ice cube.
  2. You can add and reduce chilled water as per your taste. Serve immediately.

Kulfi -faluda

Make this summer cool……..

Enjoy the summer and keep yourself cool with homemade Kulfi – faluda…………

Containing milk and dry fruits, gives you burst of energy. You feel zest with every bite.

Ingredients:

  • Kulfi: 400-500 gm
  • Sabja seed (basil seed): 1 teaspoon
  • Sliced pistachio: 3tablespoon
  • Sliced cashew nut: 3 tablespoon
  • Rose syrup: 6-7 tablespoon
  • Fresh fruit (pomegranate, apple, and mango): optional
  • Faluda sev: 1 bowl

For making faluda sev:

  1. Corn flour: 1 cup
  2. Water: 2½ cup
  3. Ice: 1 tray
  4. Water: 1 glass

Preparation:

  1. Soak sabja seed into one cup of water for 30-40 minutes, keep aside.
  2. Mix corn flour and water solution, mix properly so that lumps doesn’t form.

Method:

  1. Cook this solution on medium lower flame, stir till it become translucent and thick dough consistency like photo, fill this hot dough into sev maker with spoon.
  2. Operate the sev maker, and allow the prepared sev to fall in a bowl filled with ice and water, keep this sev in cold iced water for 10-12 minutes.
  3. Now faluda is ready to use.
  4. Arranging the kulfi – faluda:
  5. Take quarter plate, pour rose syrup and prepared sabja seed, add kesar-pista kulfi topped with faluda and rose syrup. Decorate with dry fruits slices and fresh fruits.
  6. Now, yummy Kulfi –faluda is ready to serve, you can serve this into glass/ice cream bowl as per your wish.

Malaidar sweet lassi (sweet yogurt drink)

It takes me down the memory lane when my sons were kid, they were so much fond of this lassi in summer season that they would take out the ice and curd, put them in a pot and start churning them with their tiny hand, forcing me to take over and make the malaidar sweet lassi. In my mother’s house the old wooden hand churner is still in use.

This is very good for summer season, thadha thandha, cool cool, very good for school going children or office going adult.

Ingredients:

  • Curd: 2 cups
  • Milk: 1 cup.
  • Sugar/honey: ½ cup
  • Kewada essence: ½ teaspoon (optional)
  • Rose essence: ¼ teaspoon (optional)
  • Malai (fresh cream): ½ cup
  • Almond sliced: 1 tablespoon
  • Pistachios sliced: 1 tablespoon
  • Green cardamom: 3-4 no.
  • Ice cubes: few

Preparation:

  1. Chop almond and pistachios into small slices. Keep aside.
  2. Pound green cardamom, keep aside.

Method:

  1. Take an earthen pot preferably, put curd, milk and sugar; churn it with blender on full speed till it becomes smooth and frothy.
  2. Add both essence and cardamom powder churn for a while, add ice cubes and churn again for a while, smooth and doubled frothy lassi is ready.
  3. Healthy sweet lassi is liked by everyone, while serving in tumbler garnish with a hip spoon of malai, sliced almond and pistachio.

Mutton soup (lamb legs/paya soup)

Now a day’s soup is popular all over world, this soup is very special and full of calcium and good for joint pains. My family is great fan of this soup, my grand-mother made this paya soup; she used to serve this soup before meal or as a breakfast and preferred to continue daily for a week or two.

This soup gives strength to bones, cook this soup in traditional way and this is very simple to cook, healthy and tasty with amazing aroma. It takes little longer to cook.

Ingredients:

  • Mutton (leg/paya piece):  2 no. (Approx 200gm)
  • Onion: 50 gm
  • Tomato: 1 small (optional)
  • Turmeric powder: 1 pinch
  • Bay leaf: 1 no.
  • Cloves: 2 no.
  • Garlic flakes: 2 no.
  • Ginger: 2 inch piece
  • Ajawine (carom seeds): ½ teaspoon
  • Salt: 1 teaspoon (as per taste)
  • Black pepper powder: ½ teaspoon
  • Water: 750 ml
  • Butter: 1 teaspoon (optional)

Preparation:

  1. Clean and wash mutton paya (in pieces without skin) with running water.
  2. Clean garlic pods. Cut into pieces.
  3. Cut onion and tomatoes into small pieces.

Method:

  1. Put all ingredients into the pressure cooker, mix well.
  2. Close the lid, bring it to full cooking pressure, Reduce to lower heat and cook for one hour to one hour 15 minutes (depending upon how tender is lamb), Allow cooker to cool.
  3. Stir the soup  like pressing manner for couple of minutes so that all ingredients blends well, boil again and serve hot with spreading little black pepper and butter.

Healthful Sweet poha (sweet beaten rice)

Mithila is the culture hub of Bihar and has its own beauty. Madhubani painting has its own popularity and Maithili people are sweets lover and use poha (beaten rice) in many ways i.e. poha-curd, poha-milk, fried poha and many more. Today I am going to upload a variation of poha.

It is very quick and super healthy breakfast, which is made without cooking and very healthy especially for children. You can never imagine how tasty it is! Sweets uplift your mood make you feel fresh and energized.

If basmati poha is not available, use normal poha. It will create the same magic.

Ingredients:

  • Poha (beaten rice):1 bowl (basmati poha)
  • Brown sugar/Jaggery: ½ cup (as per your taste)
  • Apple: ½
  • Pomegranate: ¼ cup
  • Carrot: 1 no. (Medium size)
  • Date: 3-4 no.
  • Cherry: 4-5 no
  • Cashew nut: 8-10no.
  • Green cardamom: 2-3 no.
  • Ghee (clarified butter): ¼ teaspoon
  • Almond: 8-10 no.
  • Fresh scrap coconut: half cup

Preparation:

  1. Cut apple, carrot, date, cherry into small pieces, keep aside.
  2. Chop cashew nut and almond into thin slices, keep aside.
  3. Peel off cardamom and make fine powder, keep aside.
  4. Wash poha properly, two times. Soak with little water (About 50 ml/5 table spoon).
  5. Cover it and leave it for about 10-12 minutes.

Method:

  1. Take a mixing bowl; put all ingredients, mix them well, Healthful Sweet poha (sweet beaten rice) is ready to serve.
