Raw turmeric and ginger pickle

Ingredients:

  • Raw turmeric: 100 gm
  • Ginger: 75-100gm
  • Salt: one and half teaspoon
  • Yellow mustard: 2 tablespoon
  • Fenugreek seed: 1 teaspoon
  • Red chili powder: 8-10no.
  • Mustard seed: half teaspoon
  • Whole red chili: 1 no.
  • Asafetida: 1 pinch
  • Funnel seed: 1teaspoon
  • Kalonji (Onion seed): 1 pinch
  • Mustard oil: 50 gm
  • Lemon: 1 no.

Preparation:

  1. Scrap and discard skin of turmeric and ginger, diced into small pieces.
  2. Put these in to the sun or under fan for 20-30 minutes for drying to get rid of extra water.
  3. Grind yellow mustard seed, fenugreek seed and dry red chili together, keep aside.

Method:

  1. Take a fry pan. Put oil in it, when oil starts smoking, put one pinch mustard seed, one dry red chili broken in 3-4 pieces and asafetida.
  2. Let it sputter for few seconds, put off the flame.
  3. Add dry masala and mix it well; let it cool to room temperature.
  4. Take a bowl; put dried ginger and turmeric pieces in it.
  5. Pour this oil masala mixture on the ginger and turmeric pieces.
  6. Mix properly with the help of spoon.
  7. Now, raw turmeric and ginger pickle is ready.
  8.  Store this pickle in a glass container.
  9. You can use this pickle for months.
