Aaloo (potato) chop

Preparation:

  1. Boil, peel and mash potatoes. Keep aside.
  2. Chop garlic, green chili and ginger into very small pieces. Keep aside.
  3. Take a bowl. Put Besan, salt, kalongi, ajawain and Meetha soda, put water to make a smooth batter.

Method:

  1. Take fry pan, put oil and heat, when it smokes add cumin seeds, wait till it sputters.
  2. Add onion, garlic, green chili and ginger in it. Stir it and fry (keep it stirring otherwise it may burn).
  3. Add mashed potato and fry. (About 2-3 minutes)
  4. Stir well, lower the flame, and fry for couple of minute.
  5. Add green coriander leaf and mix well.
  6. Now, potato masala is ready. Let it be cool.
  7. Put jal-jeera powder and salt.
  8. Divide this potato masala into 6-8 parts.
  9. Make round shape and press with palm to get tikki shape as shown in photo. Keep aside.
  10. Dip fries the tikki:
  11. Take kadhai (fry pan), heat oil in it.
  12. Let oil to smoke. Pour a drop of batter into the oil.
  13. If batter comes up, it means right temperature of oil otherwise wait for a while and test again.
  14. After getting right temperature of oil, dip tikki into batter. (Either helps of your hand or spoon)
  15. Deep fry all tikki, till golden brown. Keep aside.
