Parwal (pointed gourd) do pyaja

Ingredients:

Preparation:

  1.  Wash and Trim the both ends of pointed gourd, and cut longitudinally into fine pieces.
  2. Chop onion slice longitudinally.

Method:

  1. Heat 2 tablespoon of oil in a fry pan.
  2. Add Parwal in it, and sauté on high flame.
  3. Fry until Parwal is half done, (About 5-7 minutes).  Keep aside.
  4. Put 2 tablespoon oil in fry pan and heat it.
  5. Add cumin seed, when it turns brown, add chopped onion.  Fry till onion become transparent. (About 5-6 minutes)
  6. Add fried Parwal and stir it.
  7. Add chili powder, coriander powder, turmeric powder.
  8.  Fry till Parwal is done and onion become light brown.
  9. Add Garam masala powder.
  10. Parwal do pyaza is ready to serve.

Serve with roti, paratha or as a side disc.

Stuff Large Red chili pickle

Ingredients:

Preparation:

  1. Clean and wash red chili.  Dry them with kitchen towel.
  2. Remove the stem of chili.
  3. Take out all the seeds carefully (chili should not get torn) from the chili with the help of knife.
  4.  Keep aside the seed.

Method:

  1. Take a big mixing bowl. Put all powder masala in it.
  2. Add in it, mix well with some amount of oil.
  3. And make thick paste. Now stuffing is ready.
  4. Fill this masala paste into each chili carefully and properly.
  5. Put this stuff mirchi (red chili) to dry into the sun for 4-5 hours.
  6. After that dip this into oil, one by one and store it into the glass jar, put remaining oil.
  7. Next day put this jar outside into the sun for drying for another 4-5 days.
  8. Note: shake the jar daily, so that oil coating is going all around the chili.
  9. Now, mouth watering north Indian red chili pickle is ready to serve
