Aaloo (potato) Parwal ka bhujia (potato- pointed gourd fry)

  1. Peel off and Chop the potatoes length wise.
  2. Wash and Trim the both ends of parwal (pointed gourd), and cut into 8 pieces length wise.
  3. Chop onion into thin slices.

Method:

  1. Heat 2 tablespoon of oil in a heavy bottom pan.
  2. Add cumin seeds when it turns brown; add a pinch of turmeric powder.
  3. Drop chopped potatoes and sliced Parwal in the oil, sauté on low flame.
  4. Fry until half done, (About 5-7 minutes)
  5. Add onion in it.
  6. Add chili powder, coriander powder, turmeric powder and salt.
  7.  Fry till vegetables are done.
  8. Now aaloo Parwal ka bhujia is ready.
  9. Garnish with chopped coriander leaf
  10.     now quick Aaloo Parwal ka bhujia (potato- pointed gourd fry) is ready to serve.
      Note: heavy bottom pan and low heat works better.
  11. This is served with rice or paratha.
