Chicken curry

Ingredients:

Preparation:

  1. Clean and wash chicken. Soak with vinegar for 5-10 minutes. Wash with water.
  2. Marinate chicken with one teaspoon of salt, half teaspoon turmeric powder, and half teaspoon of garlic paste.
  3. Grind onion and tomato to fine paste.
  4. Chop coriander leaves.

Method:

  1. Take a fry pan. Heat oil on high flame until smoke starts coming.
  2. Lower the flame, put 5-6 chicken pieces and increase the flame to high.
  3. Fry on both sides till dark   golden brown color appears (about 2-4 minutes each side).
  4. Remove the fried chicken pieces in a separate bowl/ plate
  5. Fry remaining pieces in the same way.
  6. Keep aside all fried chicken pieces.
  7. Put 3 tablespoon of oil in a fry pan.
  8. Add cumin seed, clove, and bay leaf, in it. Sputter it for few seconds.
  9. Add onion and tomato paste sauté till light brown.
  10. Add garlic and ginger paste. Stir it.
  11. Add chilly powder, turmeric powder and coriander powder. Mix it well.
  12. Reduce to low heat, and cover the lid. Fry till oil separates from masala (or liquid dries up).
  13. Add 2 cup of water and cover the lid. Slowly add 2 cups of water (as per gravy thickness.)
  14. Boil it for1 minute.
  15. Add fry chicken in it.
  16. Boil it for 3-5 minutes. .
  17. Add Garam masala powder and stir it.
  18. Put off the flame.
  19. Garnish with coriander leaves.
  20. Serve hot with rice or roti.

Achari Sem ki phalli Aaloo

Ingredients:

Preparation:

  1. Trim the both ends of the Sem ki phalli.
  2. Remove Strings from each bean.
  3. Slit into two.
  4. Wash and peel off the potato.
  5. Cut the each potato into 2 pieces.

Method:

  1. Boil potato.
  2. Boil the Sem ki phalli  (Seeds also) with pinch of soda.
  3. Take a mixing bowl. Put garlic paste, 1 teaspoon of salt, turmeric powder, chilly powder, mustard powder, dry mango powder and oil. Mix well.
  4. Add boiled sem ki phalli  and potato in it. Mix properly.
  5. Achari sem Aaloo is ready to serve.

It is served with paratha or rice as a side dish.

Kamal kakdi (lotus root) kabab

Ingredients:

Preparation:

  1. Wash and peel off the lotus stem
  2. Cut the lotus stem into 4 to 5 inch long pieces.
  3. Put it into salted water bowl.
  4. Chop the onion longitudinally
  5. Chop coriander leaves and green chilly.

Method:

  1. Wash chana dal properly with water.
  2. Put the lotus stem into cooker with 1 cup of water, one teaspoon of salt, chana dal, Garlic, Ginger, Red chilly, Whole cinnamon and cardamom
  3. Place cooker on high flame, and bring to full cooking pressure.
  4. Reduce the heat on low flame and cook it about 10-15 minutes.
  5. Open the lid by depressurizing, and allow extra water to evaporate.
  6. Take all material out from the cooker and grind it.
  7. Now, kabab dough is ready.

For making kabab:

  1. Take a fry pan, pour oil in it.
  2. When smoke starts coming out, deep fry the onion Julian.
  3. Take out dough in a big bowl; add chopped coriander & green chilly, fried onion and khus-khus.
  4. Mix all ingredients.
  5. Shape it in small kabab (in different shape as per your choice), place cashew nut in each kabab’
  6. Heat the oil in a kadhai and deep fry the kabab till it turns golden brown in color from all sides.
  7. Serve hot with green chutney and til (sesame seed) chutney.

Note:

  1. you can shallow fry this on non stick pan.
